3-2-1 Dip {Instant Pot, Stovetop, or Slow Cooker} – An EASY dip with just 3 different ingredients!! With 3 different choices how to make it! Creamy, cheesy comfort food that’s great for game day parties or TV nights on the couch!!
With the all the game day parties happening this time of year, an easy and super flavorful dip will make you look like the hostess with the mostess.
Or make it for a Netflix kind of night on the couch. This is perfect creamy, cheese comfort food.
The name comes because there are 3 blocks of cream cheese, 2 cans of Rotel, and 1 pound of Italian sausage used. So easy.
Often times it’s simple recipes with short ingredient lists that deliver big time bang for their buck and this is one of those recipes. People go nuts for it too.
If you have an Instant Pot you can brown the sausage in it which is handy. Then add the cream cheese and Rotel and let the cream cheese melt.
Or you can brown the sausage on the stove and melt the cream cheese with the Rotel in that pot and keep everything on the stove.
Or brown the sausage on the stove in a saute pan and transfer it to your slow cooker if that’s easier for you based on your party or event. There are many ways to make this dip and they all work.
I used one can Original Rotel and one can Hot Rotel with hot Italian sausage to give some heat and flavor to the dip. It’s got some kick without being spicy but you can stick with mild versions of sausage and Rotel if you’re not into kicked up foods.
It makes a big batch as written but I’m sure you can halve it. Or just invite lots of friends over.

3-2-1 Dip {Instant Pot, Stovetop, or Slow Cooker}
Ingredients
- 1 pound ground Italian sausage, casings removed (I prefer hot Italian sausage to mild)
- three 8-ounce blocks cream cheese, I used 2 regular fat blocks and 1 lite
- two 10-ounce cans Rotel (I used one can Original and one can Hot
- fresh cilantro or parsley for garnishing, optional
- fresh red bell peppers for garnishing, optional
Instructions
- Instant Pot - Add the sausage and saute it until it's cooked through. Switch to slow cooker mode, add the cream cheese, Rotel, cover, and cook until the cream cheese has melted and dip can be stirred smooth, about 30 minutes or as necessary. Optionally garnish before serving.
- ย Stovetop -ย Add the sausage to a large saute pan or Dutch oven and saute it over medium-high heat until it's cooked through. Reduce the heat to medium low, add the cream cheese, Rotel, cover, and cook until the cream cheese has melted and dip can be stirred smooth, about 5 to 10 minutes; stir intermittently while simmering. Optionally garnish before serving.
- Slow Cooker -ย Add the sausage to a large saute pan or Dutch oven and saute it over medium-high heat until it's cooked through. Transfer sausage to slow cooker, add the cream cheese, Rotel, cover, and cook until the cream cheese has melted and dip can be stirred smooth, about 30 to 45 minutes depending on high or low cooking temp and your slow cooker. Optionally garnish before serving.

Do you need to drain the grease from the sausage after browning it and before adding cream cheese and rotel to the instant pot?
I do not but you can if you want.
I have a question…Rotel tomatoes have a lot of liquid. Do you drain the liquid, or throw it in the pot?
No need to drain.

I like hearty, chunky dips and could probably eat this with a spoon, but I bet tortilla chips are perfect for scooping it up!!
