Hi Friends!  I hope your Hump Day is off to a good start.  What’s going on in your world?  I have a really busy day ahead but wanted to share some Caribbean Inspired Meals and Recipe Ideas.

We’ve only been home from Aruba for 10 days, but that trip feels like a lifetime ago.

Another Vegan Stir Fry with rice that I made while in Aruba the previous year.  This one is the 2009 version. Ironically, posted it On Christmas Day.  What a fun memory as I think back to that day.

This is a complete Caribbean Themed Meal in itself.   Rice, beans, nut butter, coconut milk.   Creamy and filling.

From my earlier post today, thanks for the compliments on my new hair pictures and for filling me in on what learning curves you’re working on right now as well as things that have been a learning curve for you in the past.

Questions
1. Is there a particular type of food or ethnic cuisine that you just love? i.e. Italian, Indian, Chinese, etc?
I am not a fan of garlic and onions, curry, or some of the predominant flavors, or foods in many types of cuisines that other people seem to “love”.

I do love citrus flavors, ginger, lighter and sweeter flavors, and veggie-laden dishes, so I would say Caribbean-themed or Hawaiian-themed food is my calling.  It’s hard to label though.  Not a fan of labels, anyway.

2. Do you ever make stir frys?  What do you put in yours?  
I made this Sweet & Sour Veggie Stir Fry in San Diego recently and used up some odds and ends, and it was good!

3. Are you inspired to cook more of a certain type of cuisine because you realize you love it?
I would like to try my hand at cooking more Indian food.  But hold the curry.  

And I’d also like to try making more Thai food at home.

I also want to try making veggie-sushi rolls at home.  Maybe that’s because I can add another gadget to my cooking list of wants.  One of those sushi rolling mats.
