How are you doing today?  I’m chillin like a villain as a solo parent.  Scott’s been gone since early Sunday morning, I’ve been taking care of the Little Princess by myself, and can’t wait til he gets home late Tuesday night!  I miss him.  But admittedly, a break from the 24/7 solo childcare will be lovely, too!

But I just want to say Thank You to everyone who wrote in and complimented me on the Raw Vegan Peanut Butter Cups (3 Ingredients, 10 Mins)!!    I had a huge response on these and each and every comment was sooo appreciated!!!!  Thanks to new readers who came out of the woodwork as well as faithful commenters.  All your input is awesome, so thank you for the lovely feedback!

The PB Cups are really easy, fast, & soooo yummy.  It’s so much more satisfying to eat them too knowing you’ve made your own PB Cup without any mystery ingredients like the store-boughts tend to have.

I wanted to feature reader Rachel’s PB Cups.  She’s the first one to send in a pic of her handy-work!  Which leads me to my Open Call for Reader Photo Submissions!  If you send me pics of any recipe you make of mine, I would be thrilled to post it with a link back to you!  Deal?  Ok good.  Now start sending in your chia pudding pics, your raw vegan apple crisp, your PB Cups, whatever you’ve got!  If you’ve made a recipe of mine, I can’t wait to showcase it here!

Also, thanks for your comments on yesterday’s post about when to say something to random strangers about their behavior and when to just let it go and carry on your way.  I really enjoyed reading your thoughts on that!

 I cracked open Pro Bar in Cherry Pretzel Flavor

Chunks of chocolate chips, cherries, flax seeds, nuts.  These bars are by no means low-cal, but they are full of chunky goodies.  You can tell what you’re eating, not just mutilated, pulverized nuts, dried fruit, or chocolate.

And here’s another cherryJust kidding, it’s the first grapefruit of the season that I’ve had an it hit the Vitamin C spot.   I’ve been fighting a little cold, you know, new yoga studios, toddler germs, the Swine Flu, this should keep the sickies away!

And to recap some recent grub around here….
I made a Vegetable Drawer Salad.  Meaning half the veggie drawer went in:  Tomatoes, Cauli, Brock, Brussels’s, Cukes, Zukes, Greens, Carrots, Yellow Peppers, and dressed it with the juice of 1/2 an orange, agave, and cracked black.

Also made a Monsterous Kale Salad with Sugar Snap Peas, Brock, Cauli, Orange Pepps, Tomatoes, Cukes, and Homemade Vegan Slaw Dressing (my new go-to).  The dressing just gets caught up in the kale leaves and my tastebuds get caught up in Loving. Every. Bite.

And after my kale salad and sweet potato fries, it was time to dig into a Raw Vegan Chocolate Peanut Butter Cup.

    Wint yoga I describe myself as an intermediate beginner. Definitely not a beginner but I have a long way to go. I love that you are my resource though and that you can answer all sorts of questions for me. You are hands down my yoga go-to gal and I love ya for it!

  3. Oh. My. Gosh. It's 7:38 am and I'm sitting here drooooling at work! Wishing I made some raw chocolate pie for breakfast! :P

    I was never a big yoga person until I took an Iyengar class at my campus gym. I loooved the static poses that stretched my muscles to their very limits. And I liked how the instructor was very hands-on and informative. I do more generic type class at my new gym that I still love, and some Hatha-inspired stuff too. No power yoga or bikram though, I run to work out, I do yoga to chill and get some peace :)

    About yoga…I do it occasionally and I definitely need to do it more! It is so centering and beautiful, and it stretches me out like Gumby!

  5. I just started taking yoga at my gym and I'm REALLY enjoying it!!! It's good for my back. but I would like to learn more poses to do through out the day:)
    and I must say this post was chocolate heaven!

  7. I love Amazing Grass! I can't wait to see what kind of recipes you come up with.
    As far as yoga goes, I am quite a beginner. I have been doing it only once a week for the past 2 months, and I have started to notice some improvements in my flexibility. My balance is another story!
    How many days a week would you recommend doing yoga for a beginner like myself? I am looking to tone up, improve balance and flexibility, and feel good overall. :)

  11. I have to say that pie looks awesome!!! Who ever made that was quite creative :) hehehe. Everything looks so good but to be honest I am about to vomit from all the cc pumpkin cookies I ate earlier. I am putting a ban on making sweets in my house until…???…???…well probably next week. hehehe

  13. Ahh, I agree with Veggie Girl! You need to open a raw/vegan restaurant. I'd be there everyday ;)

    I'm a total yoga beginner. I've tried it a little, but have never really stuck with it. I do think it'd be cool to get into it :)

  15. I love your yoga poses! I taught yoga for about 3 years in college, but I am far from teaching now. I do it a few times a week but am not as good as I was. I would love to get more into it!!
