Hi Friends! I’ve had a busy day and have had lots going on.  How have things been for you today?

I received this package of Coconut Water from One Drinks

I love coconut water and can’t wait to crack into this stash!  I am excited to try the flavored coconut water.  I’ve never had anything other than plain so the pineapple coconut water and the One Active Sports Drinks sound like a great change of pace.

Two recipes I have that use Coconut Water:

1.  Coconut Milk Kefir – Counter top Recipe
Combine 3 things and let them sit on your counter for 18-24 hours and you’ll have kefir.  Easy.  Heather and Katie have both made it and even Katie who has told me that she doesn’t “love” coconut-flavored things, said she liked this.

2. Coconut Water “Gatorade”
Great for everything from hangovers to post-workouts because of coconut water’s natural electrolytes and healing properties.

Factoid: Did you know they used coconut water in a pinch in WWII for blood transfusions because coconut water is extremely similar to human blood plasma.  More facts about coconut water here

Flavor it with lemon, lime, green tea, vanilla stevia, whatever you think sounds good!

I’m glad you enjoyed my Caribbean Inspired Meals and Recipes Post!

It was a big one and chock full of recipes and ideas from Caribbean Inspired Stir Frys to Rum Cake Balls

Included in that post was my recipe for Caribbean Coconut Rice with Garbanzos & Veggies
Although that recipe doesn’t use coconut water, it uses coconut milk.   Since we’re talking coconut and all today I thought I’d mention that.

It was fun hearing your favorite types of ethnic cuisine and what you’d like to make more of at home, too.  Lots of people told me they make at-home sushi and I am game to try that out, soon!

Questions
1. Have you ever had coconut water?  If so, did you like it?
I had not tried coconut water until about 4-5 years ago.  Ever since then, I’ve been a fan.  It’s very light, slightly sweet, and really doesn’t have what I would call the “traditional coconut taste”, if that makes sense.

2. Do you like coconut things?
I didn’t use to like anything coconut except Seven Layer Bars and the inside of a Mounds Bar or Almond Joy bar.  That was as much coconut as I liked.

But in the past few years, I went from being meh about coconut-flavored things to really loving coconut things.  I’m not sure what changed other than just trying different types and parts of the coconut: water, milk, coconut meat, flakes, oil, and butter.

As well as trying different brands on certain things.  All are not created equal, that’s for sure.

Do you like coconut or coconut flavored foods?

3. How’s the weather where you are?
I hope you’re staying warm and dry.  It’s sunny and in the high 60s here in San Diego.  I can’t complain.  60 degree days in January make things like floods, fires, and earthquakes in So Cal worth it.

I got a nice 20 minute outdoor run in earlier today.  And then I came home and did some yoga and core work for 20 minutes.

See you later…Toodles!
