I’m working, and Scott is going to be home. After a week of single parenting and working fulltime, I’m ready for a break and some help!
And we may go on some Easter egg hunts (the plastic variety) and the Easter Bunny will probably stop by with a Easter Basket goodies.

I am incredibly proud of my vegan baked potato soup that I made last week… it’s seriously some professional stuff! :D I haven’t had much time to cook lately AT ALL, so I was really excited that it came out so well!

Weekend plans…..guess there is yet another puppy rescue in East St. Louis.
Digging, and digging, and ripping apart collapsed homes in search of 2 more puppies! Yikes. Add that to the excitement of insane tornadoes ripping through St. Louis! And cutting endless hours of videos of stray puppies from the streets of East St. Louis (www.gatewaypets.com).
Throw in a dash of sleep, or not. Endless amounts of Yerba Mate. A hubby practicing away to take yet more auditions. Lots of cats & dogs sleeping and being lazy since we basically are entering a tornado, rain season. Yes, there is a reason property values are cheaper here!! It is no Southern California!! But we will have a raw vegan place opening in a couple of weeks! Puravegan!
I made Kath’s Dough Boy Smoothie this week & loved the quick and tasty breakfast!
Delicious pics! I crave for chocolate, will make a chocolate cake for Easter Sunday. Have a nice weekends!

good lord! Amazing new recipes for me, thank you for doing this, it rocks! the problem is I have narrowed down what I want to make this week, and now I see these! What am I to do?, retire and cook/bake all day? sounds good to me!
