Fruit and Yogurt Parfaits with Easy Granola – Easy, healthy, and perfect for breakfast, brunch, or snacks!
Swimsuit season is right around the corner.
And as good as cinnamon rolls and cookies taste for breakfast and snacks, they don’t look great on your hips.
Lighter fare that takes advantage of seasonal fruit is an easy swap. Especially when it’s fast, fresh, and satisfying.
There are so many trendy juice and smoothie bars here in San Diego where I live and while I love them, I draw that line at paying $10 bucks for a small bowl of yogurt, fruit, and granola.
I can make my own for a fraction of the cost and in mere minutes. And so can you.
To make the easy granola, I tossed a diced Thomas’ Light Multi-Grain English Muffin with oats, a bit of melted butter, cinnamon and sugar, and baked it briefly.
The granola is much lighter than most because there’s only 100 calories in the English muffin. I love granola but it can be a calorie-bomb if you’re not careful.
This recipe provides the heartiness of granola without the heaviness, fat, or calories and it’s ready in less than 15 minutes. Perfect warmer-weather comfort food that’s bikini-friendly and great for breakfasts and snacks.

Fruit and Yogurt Parfaits with Easy Granola
Ingredients
- 2 tablespoons unsalted butter, melted
- 1 Thomasโ Light Multi-Grain English Muffin, halved and diced small
- 3 tablespoons old-fashioned whole-rolled oats, not quick-cook or instant
- 2 tablespoons granulated sugar
- 1 teaspoon cinnamon
- 4 to 8 ounces yogurt, low or nonfat okay, use your favorite flavor and type
- 1 to 2 cups diced fruit, I used 1/2 banana and about 10 strawberries, halved
Instructions
- Preheat oven to 375F and line a baking sheet with aย Silpatย or spray with cooking spray; set aside.
- To a medium microwave-safe bowl, add the butter and heat on high power to melt, about 1 minute.
- Add the English muffin, oats, sugar, cinnamon, and toss to combine and coat evenly.
- Turn mixture out onto prepared baking sheet in flat, even layer. Mixture will only take up about one-third to halfย the baking sheet, not the entire sheet.
- Bake for about 13 to 15 minutes, or until as lightly golden browned and lightly toasted as desired. Granola will firm up as it cools.
- While granola bakes, add yogurt to serving bowl, top with fruit, and then sprinkle with granola. Breakfast bowlย should be made and served fresh. Extra granola will keep airtight for up to 3 days.

My mind is going toward lighter food as well. ย I’m craving salads and fruit these days. ย
Oh my gosh Averie, this is SO creative! I love the granola made out of an English muffin – amazing! I’ve got some on hand, I’ll definitely try this for breakfast – I still have some pregnancy hips to lose… Pinned :)ย
Thanks for pinning and it’s the perfect ‘skinny’ granola :)
perfection, I love easy breakfasts that are so tasty and that granola looks delish.
This is a perfect recipe right now for us, as strawberry season it at it’s peak and they’re delicious. ย I will definitely try this recipe. ย Thank you!
What a brilliant granola recipe…I love the parfait glass and your pictures of fruit are always the best!!
The parfait glass was something I used for cookbook #1 back in 2011-12 when I was writing that book!! I used it once and never again. It was a thrift store lucky find and it jumped out at me when I was making this recipe like okay, this will work. 4 years later I’ve now used it…twice. LOL :) Thanks for noticing!
I SO wish cinnamon rolls were good for you! I’m currently going through a healthy eating phase so this granola is perfect for that. Nice and light and fresh!
I had an appt. before work today and planned on taking fruit and yogurt with me—what timing to see this recipe!! I made the granola with a slimwich, tossed it in a baggie and picked up a mixed berry fruit cup. I really like that granola–sweet with a little crunch and the bread is still a little soft inside. Mine got kind of dumped together so it wasn’t pretty but it sure was good!
Leave it to you to make a recipe of mine the same day, within hours, of me posting it!! That is awesome and so glad you like the granola and the bread with sweet with a little crunch and a little bit soft with the slimwich you used. Glad this came in handy for you today, literally just in the nick of time :)
Granola with English muffins? YES PLEASE! This looks incredible and oh so easy for mornings on the go!
Super easy in the best kind of recipe! :)
Yum! I’m just sitting here, wishing that I ate this for breakfast, instead of skipping once again!

I so love that you made the granola out of Thomas’. Genius!! Fruit and yogurt parfaits are one of my favorite breakfasts. Pinned!
Thanks for pinning and sometimes I do occasionally get ideas that I’ve never done before…there is a benefit to long runs for recipe brainstorming sessions :)
Oh my gosh what a good idea to use English muffins in granola! This looks so good, greek yogurt and homemade granola has been my go-to breakfast the last couple weeks, I’ll have to try this granola!
I just LOVE the sound of throwing diced English muffin into the granola mix! It looks so sugary, crispy and almost like breakfast-style croutons! These parfaits would be a perfect way to kick the weekend off to a healthy start!
breakfast-style croutons = exactly! Great way to put it!
Awesome idea to add an English muffin in the granola topping! So annoying to spend on overpriced yogurt when you can make your own so easily. Delicious!
My parents are on vacation in San Diego right now! Out here on the east coast, we need a dose of sunshine after all the coldness.
It’s such a great idea to use English muffins with oats for granola! Super creative, and also so much healthier!
Oh that’s too funny!! Well the weather in May here is known for ‘May Gray’ and then we have ‘June Gloom’ so it’s not really the super sunny and perfect blue skies weather, but it’s probably warmer than back east :) Hope they have fun out here!
I’ve seen all the pretty acai bowls on Instagram, but can’t seem to buy one when I pass by a shop- $10 seems way too much for a glorified smoothie. This seems so much better, especially with the sweet/toasty croutons (might even just make the croutons because I could eat a tray of those alone)!ย
$10 seems way too much for a glorified smoothie = amen!
And I could eat a tray of the croutons alone, too!
