GF Peanut Butter Marshmallow Bars with Vegan Chocolate Frosting

These are close to the Butterscotch Rice Krispy treats my grandma used to make me as a kid which I believe are called Scotcheroos but I know my grandma doctored everything up and never followed a recipe anyway.

Susan and I love marshmallows like nobody’s business.  The only way I could possibly like these even more is by using sunflower seed butter rather than PB.  My wheels are already turning for when I get home to San Diego….haha!

GF Peanut Butter Marshmallow Bars with Vegan Chocolate Frosting on plate

GF Peanut Butter Marshmallow Bars (Vegetarian) with Vegan Chocolate Frosting
1/ 2 bag Marshmallows (150 grams, approximately).   Sweet and Sara brand is vegan.
1/2 bag Butterscotch Chips (100 grams, approximately). If you want to keep this recipe vegan, you can use Chocolate Chips, not butterscotch chips
1/2 c Peanut Butter
1/3 c Vegan Butter
1 Tsp Vanilla Extract

Directions
Melt the Butterscotch Chips, PB & Butter, stir to combine, and add vanilla.

Place the marshmallows in a greased/sprayed small baking dish (8 x 8 pan would work well)

Optional: Add 1/4 c chocolate chips and 1/4 c Butterscotch Chips to the Marshmallows

Pour the Melted Mixture Over the Marshmallows & Stir/Fold gently.  Let it rest in the freezer or fridge until it sets up.

Here are pictures of the process.  Looks like a lot, but honestly, these came together in less than 10 minutes, and even less time if you use store-bought frosting and don’t make your own.

 Melt the butter, PB, and butterscotch chips

Stir and add in the vanilla

Stirred and gently folded everything together.  Horrible lighting but food photography quality does not effect the food’s taste.  haha!

Into the freezer for 5 minutes to cool

Remove from freezer and Optional: Frosting!  

Any kind will do but I used my recipe for Vegan Chocolate Frosting  (I had some leftover from making GF Vegan “Rice Krispie” Treats with Vegan Chocolate Frosting)

Or if you want to keep the Peanut Butter theme alive, use Chocolate Peanut Butter Coconut Oil Frosting

Skylar waited patiently for food photos to be over with so she could dig in!  Photos first, then eat.  She knows The Rule.  Wasn’t too happy about it but….

….She can cheese it up for the camera on command.  Especially when there’s incentive.

A bit tricky to get out of the pan.  In an ideal world I would have used an 8×8 pan but I am on vacation and don’t have that so the Corningware sufficed.

This square is about 1 inch x 1 inch.  I rarely say something is too rich.  These are beyond rich.

This was amazing.  It was well worth every last ridiculously rich bite.

1. Best Thing You Ate or Did over the Weekend? 
We went out for a drink on the beach at Happy Hour last night which was fun!  Pictures to follow in an upcoming post.  Just being here on vacation with my family is all I could possibly ask for!  Such a blessing and I am so happy!

2. Favorite Holiday Baking Recipe?
I am seeing so many great ones around the sphere from Holly and Tina’s Dipped Oreo Balls to lots of variations on Chocolate Dipped Pretzels I’ve seen to Jessica’s PB Cookies to Katie’s Monkey CupsIt’s just too hard to choose what I want to make next.

3. What’s the richest dessert that you have ever eaten or that comes to mind?
Lots of people would say cheesecake I think.

My Raw Vegan GF Cheesecake is rich, indeed.

Something about all the sugar and (vegan) butter and alcohol I think.
