We were honored when Averie asked us to do a guest post while she is away on vacation.
Here is a quick introduction of who we are.
We are the Pure2Raw Twins from www.pure2raw.com. We are two best friends who happen to be twin sisters. We both are high raw vegans who eat gluten free, peanut free, corn free, and soy free. Our blog is our journey through finding balance and good health through this ‘so called’ life as well owning own our business. Our bakery is called Twin Cakes Bakery, which is a gluten free, vegan, peanut free bakery, plus have our Pure2Raw product line. Pure2raw is where we love to share our passion for fitness, health, plus baking and unbaking away in the kitchen : ) We enjoy running and our newest passion is yoga. Averie has been very inspirational to us both!
Yep here is a never fail, 20 minute recipe that we hope it will become a staple in your kitchen. We know a lot of people (like us) that can’t eat this or that for whatever reason miss childhood classics, so here is our remake of one with a healthy twist!!
Pure2raw Twins Recipe:
One Pot Gluten Free Vegan Mac-n-Cheese
Serves 2-3
Step 1:
- 2 cups water
- 1 cup quinoa
In small saucepan over high heat bring the water to a boil. Once boiling and quinoa and return to a boil. Then reduce heat to low and let simmer for 15 minutes
*There might be some water left over, but that is okay.
Remove from heat and pour the quinoa into a bowl and set aside.
Step 2: The cheezy sauce
- Ingredients:
- ¾ cup coconut milk
- 3 tbsp nutritional yeast
- 2 tbsp tahini
- 2 tbsp arrowroot
- 1 tsp lemon juice
- ½ tsp salt
- ¼ tsp garlic powder
Using the same pot that the quinoa was in, place it back on the stovetop over medium heat and add coconut milk and tahini. Whisk together. The tahini will melt into the milk. Then add remaining ingredients and whisk. Raise the heat to be medium high. It will start to thicken, takes about 1-2 minutes. Once it starts getting thick pour the quinoa back in the pot and stir till well combined.
And you done. : )
Have fun and add your favorite seasonings, we added a pinch of smoked paprika and 1 tsp parsley.

Random fact about me: I have very small feet for my height. I'm almost 5'9'' and wear a size 6 1/2 shoe and I love shoes!

I always ignored smoothies in the past because I thought they were a waste of calories. I wanted to chew my day's calories, not gulp them down in one slurp. Strangely though, these days I've been REALLY into the idea of smoothies, esp. ones made from recipes like the one you listed here. I'm also not a psycho about calories anymore! That helps. :)
The food scale is something I couldn't live without when I was counting calories because it helped me get my portions just right. Again, these days not worried about calories, but kitchen scales are so great for getting recipe measurements just right w/o getting every measuring cup dirty!

I LOVE smoothies. Strawberry-banana or some kind of tropical fruit with blueberries (mango, pineapple, orange, or some combo) are my favorites – with spinach of course ;)

Quirky pretty much defines me, lol, so I hardly know where to begin! Probably my biggest foodie quirk is my deep, extreme, serious hatred of tomatoes. I LOATHE THEM!

wanted to say I am ok with plastic that is recycled and BPA-free. when you have health issues, it is hard not to want to eliminate anything that might be causing sickness. i get it about the kids though. i am trying to buy stuff for my due-any-day-now-niece that is at least BPA free.

i am so happy that you got a kitchen scale. i always use one for baking and cooking and often get so confused with the volumetric measurement of the states so i am much better when it coems to the scales.

Heh…I have a finicky memory. Sometimes I can memorize exact passages, long quotes, and technical explanations…but other times I'm borderline ADD.
I love post workout protein shakes, or, when I'm not going to wake up the roomies, a smoothie to go along with my breakfast. I can't have a meal that's just a smoothie though. I need chew!
It's funny though…when I make green smoothies, I never add much fruit–maybe a small handful of strawberries or blueberries. But I almost always add cucumber or zucchini! Takes the bitterness right out of any green and makes things thicker.
The best trick I ever heard for smoothies and shakes is to add a bit of xanthan and guar gum. It makes them super thick and creamy.
