Yummmmmmmmy!!!!! So without further ado, here’s The Pure 2 Raw Twins’ Guest Post.  Stay tuned for another separate, fun post for me coming right up!

We were honored when Averie asked us to do a guest post while she is away on vacation.
Here is a quick introduction of who we are.
We are the Pure2Raw Twins from www.pure2raw.com. We are two best friends who happen to be twin sisters. We both are high raw vegans who eat gluten free, peanut free, corn free, and soy free. Our blog is our journey through finding balance and good health through this ‘so called’ life as well owning own our business.  Our bakery is called Twin Cakes Bakery, which is a gluten free, vegan, peanut free bakery, plus have our Pure2Raw product line.  Pure2raw is where we love to share our passion for fitness, health, plus baking and unbaking away in the kitchen : ) We enjoy running and our newest passion is yoga. Averie has been very inspirational to us both!

Today we are going to share one of our favorite classics:
Mac-n-Cheese

Yep here is a never fail, 20 minute recipe that we hope it will become a staple in your kitchen.  We know a lot of people (like us) that can’t eat this or that for whatever reason miss childhood classics, so here is our remake of one with a healthy twist!!
 Pure2raw Twins Recipe:
One Pot Gluten Free Vegan Mac-n-Cheese

Serves 2-3

Step 1:

  • 2 cups water
  • 1 cup quinoa

In small saucepan over high heat bring the water to a boil. Once boiling and quinoa and return to a boil. Then reduce heat to low and let simmer for 15 minutes
 *There might be some water left over, but that is okay.
Remove from heat and pour the quinoa into a bowl and set aside.
Step 2: The cheezy sauce

  • Ingredients:
  • ¾ cup coconut milk
  • 3 tbsp nutritional yeast
  • 2 tbsp tahini
  • 2 tbsp arrowroot
  • 1 tsp lemon juice
  • ½ tsp salt
  • ¼ tsp garlic powder

 Using the same pot that the quinoa was in, place it back on the stovetop over medium heat and add coconut milk and tahini. Whisk together. The tahini will melt into the milk. Then add remaining ingredients and whisk. Raise the heat to be medium high. It will start to thicken, takes about 1-2 minutes. Once it starts getting thick pour the quinoa back in the pot and stir till well combined.

 And you done. : )

 Have fun and add your favorite seasonings, we added a pinch of smoked paprika and 1 tsp parsley.

  2. I loooove my food scale too! It is so useful for a ton of recipes, especially foreign ones! I love coffee girl dates…a cafe, whether it be in winter or summer, is one of my favorite places to be =)

  4. I have what I think is an eidactic memory. Or photographic, too, perhaps.I get confused by the terms. I also remember dates like Rainman.

    It is crystal clear where your daughter gets her liveliness from — you two are cut from the same (lovely) cloth!

  5. Ahhhh, Girl time, so fun isn't it. I don't get enough of that sometimes. Did Skylar have her TJ's cheesy puffs with her?? Did Barbie eat any, probably not after all she is Barbie!
    Memory: Very bad :( Two kids doesn't help that. It does feel wicked sharp after caffeine though!
    Smoothies: I could give or take 'em. I much prefer the chew too! I do make my ice blended drinks, though they usually accommodate a mini meal.
    Great headstand!
    I am going nuts right now 'cause every link on my blog is dead…..errors, not working. Feel sick. Waiting patiently for hubs to wake up and FIX problem!!

  6. I loooove smoothies, this one sounds fantastic.

    And yes, I have a great memory for some things. If it has to do with things I'm passionate about: politics, activism, veganism, feminism, history, horses, books, YES, I can remember it all.

    If it has to do with things I don't care too much about, like math, or basic common sense facts like don't put liquid dish soap in the dish washer….no, I'm not so good.

  7. Yummy smoothie! Oh I too would definitely need a kitchen scale, I have measuring jugs and cups but I would prefer a nice small scale.

    I have an excellent memory, and very often people rely on me to remember things for them. In my previous job, my employer used to tell me that it was even dangerous, as he had the tendency to count on me too much and not making the effort to remember himself, and he forgot everything :-)

  8. Yay, I'm glad you've got a scale. I had to buy a cup measurer because you guys in the US work in cups whereas we always use scales.

    I'm not a fan of smoothies and for some reason they never agree with my system.

    I have a great memory for people and a not so great memory for facts. Nevermind!

  9. oh those mommy and me shirts are too cute! i wish i hadn't gotten rid of my kitchen scale bc it would come in handy in all the fun recipes i want to try now! but that scale was janky anyways, maybe it's time for an upgrade :)

    you get the coolest mail. All we get is taxes and bills. haha

    I have been wanting a kitchen scale let us know how it goes. (but I am sure SURE I would use it to measure my yarn fiber when I spin yarn as opposed to measuring dates. I am a bit of this and that kinda cook…haha

    I too have pretty good memory…and yes, my multi tasking has to be at a minimum…but I can't read things and memorize them…I am a total audio person. if i hear it, OR if it's connected to a jingle…it's in the brain for life.

    garlic…really! no garlic and onions for you huh? I could live off the two, but raw onions make me burpy haha TMI for sure!

    I have an incredible memory for things people say, as well as dates…I memorize everyone's birthday as soon as I hear it! Sadly, that doesn't extend to anything useful, like math theorems :/

    My memory use to get me in trouble because I would remember everyone's embarrassing stories lol. Well actually that's not true in all cases. I have a hard time remembering faces and I'm working on remembering names. I just get to excited and lost in meeting new people that I totally forget to remember their name–uh that would help! lol

    By the way… SKYLAR IS SOOOO FREAKING CUTE!!! Even if she did keep you awake last night lol. But I'm glad that you got some quality girl time–those work wonders, seriously.

    That yoga pose!!! That's how my grandpa taught me how to do headstands. He use to go up to the mountains in Colombia (that's where he lives) and practice yoga there. It's funny because he has a very large stomach but if you punch it, it's rock hard. I think it has to do with the yoga breathing and being at such a high altitude. Imagine how amazing that is though. My grandpa can't climb the mountains anymore but he can still do his headstands. Anyway, such a peaceful pose :)

  15. Hi Averie! How are you doing girlfriend? Enjoying your days and getting a bit of relaxing in there? I hope so!!!!

    Such fun times! I love a relaxing tea with a friend : )

    I can't believe little Miss Skylar is going to be 3! They grow so quickly! My oldest is going to be 11 next month, yikes!

    A good kitchen scale is a must! I would be so lost without mine. I use it probably 10 times a day, at least!

    Dried cherries, dried cherries, I chant to myself. Off to O.B. People's tomorrow!

    What great t's and bag! How thoughtful! It's great to have things around that were made out of love : )

    Smoothies……yum! I just had one for dinner. Slim pickings around here Raw wise. I am almost out of hemp protein powder so I best get some before even my smoothie options are gone!

    I try to keep my memory up. My grandmother is so obsessed with not getting old. She plays bridge, sudoku and gets books from the library that help build up your memory. She's 89 and still travels around the world. That's my goal!

    No garlic? OMG! I couldn't live without it!! That is quirky : ) My random fact, I can only eat bananas by themselves. I HATE them n smoothies or anything else, yuck! Weird, I know.

    I miss getting to leave these epic comments : ( I barely get on the computer now except for necessity. Miss you! Just know I'm here lurking : ) Besides, you'll see me soon enough girl!
