We were honored when Averie asked us to do a guest post while she is away on vacation.
Here is a quick introduction of who we are.
We are the Pure2Raw Twins from www.pure2raw.com. We are two best friends who happen to be twin sisters. We both are high raw vegans who eat gluten free, peanut free, corn free, and soy free. Our blog is our journey through finding balance and good health through this ‘so called’ life as well owning own our business. Our bakery is called Twin Cakes Bakery, which is a gluten free, vegan, peanut free bakery, plus have our Pure2Raw product line. Pure2raw is where we love to share our passion for fitness, health, plus baking and unbaking away in the kitchen : ) We enjoy running and our newest passion is yoga. Averie has been very inspirational to us both!
Yep here is a never fail, 20 minute recipe that we hope it will become a staple in your kitchen. We know a lot of people (like us) that can’t eat this or that for whatever reason miss childhood classics, so here is our remake of one with a healthy twist!!
Pure2raw Twins Recipe:
One Pot Gluten Free Vegan Mac-n-Cheese
Serves 2-3
Step 1:
- 2 cups water
- 1 cup quinoa
In small saucepan over high heat bring the water to a boil. Once boiling and quinoa and return to a boil. Then reduce heat to low and let simmer for 15 minutes
*There might be some water left over, but that is okay.
Remove from heat and pour the quinoa into a bowl and set aside.
Step 2: The cheezy sauce
- Ingredients:
- ¾ cup coconut milk
- 3 tbsp nutritional yeast
- 2 tbsp tahini
- 2 tbsp arrowroot
- 1 tsp lemon juice
- ½ tsp salt
- ¼ tsp garlic powder
Using the same pot that the quinoa was in, place it back on the stovetop over medium heat and add coconut milk and tahini. Whisk together. The tahini will melt into the milk. Then add remaining ingredients and whisk. Raise the heat to be medium high. It will start to thicken, takes about 1-2 minutes. Once it starts getting thick pour the quinoa back in the pot and stir till well combined.
And you done. : )
Have fun and add your favorite seasonings, we added a pinch of smoked paprika and 1 tsp parsley.

Here I am, days and days later…well yes I guess you could say I heart smoothies! I was so shocked that you didn't have any torani syrup in your recipe- whAT!!?? you say they aren't vegan or raw (or even real 'food'?) ha ha guess not. :-) Your smoothie recipe is awesome looking. I wish I could stand there with you and have you watch me sprinkle on the gums so that you are no longer scurrrred of them. I don't blame you either btw. If I have several bad experiences, buh bye to the new recipe!

In some ways, I have a good memory. I can often remember exactly where something is located if I placed it there, which makes it helpful to track things down. BUT I can't remember people's names or time lines to save my life. 8th birthday? No memory. So-and-so's kid's name? Cutie or lil' one.
Aah it makes me so happy you and Madeline brought me up for a brief few minutes! Uhh I totally miss the AZ sunshine. I can see it illuminating from these outdoor pictures! This is going to be such a great opportunity for me, I KNOW, but I cannot help but miss the west coast. Really.
Before I started making protein ice cream at home like on a daily basis.. heh heh… I used to make a combination of frozen banana+frozen strawberry+ protein powder all the time. So simple but so good! Usually only a splash of water too, and it ends up perfect. The banana is the key ingredient! What a perfect food right?
Aahh Averie- college life. It's already getting to me. So crazy around here! Thanks for your "worldy" compliment! I even feel a little bit more grown up! And naturally a lot more mature than some of my fellow classmates. But I already knew that. :( No worthwhile boys yet.
You hate garlic? I've grown (since blogging actually) to hate onion and salt. Which… at a culinary school, are two most used/prominent ingredients. Oh well.

You went and sidetracked me with this post. The Voratious Vegan did it to me too. I was attempting to just drop you a note but got drawn in dispite my resolve to not go reading blogs today! Vegan Thursday found me at Whole Foods after 9pm,very hungry after a late meeting. I ended up having an Amy's Kitchen veggie loaf entree microwaved right then and there. So I actually ended up have Vegan food on a Thursday! Love supported headstand! Your smoothie sounds delicious. One of my favorite's is making a healthy strawberry "milkshake". Frozen strawberries, choice of milk drink (vanilla flavored the best) and some agave. Yumm! My memory abilities change from day to day hour to hour. Sometimes it's amazing, other's (like right now) not so. I had to make bullet point notes as I read your blog to remember what all to reply too! Eagerly awating "All Things Oats"!

Since I started yoga completely on my own, I actually never learned how to do a headstand. When I went to my first class a few weeks ago, I was so disappointed that I didn't know how. Well, I've been practicing against the wall, and then against the couch, and I think I'll be ready to go on my own soon! Yes, I'm excited!

Your Blueberry Smoothie sounds REALLY good.
In my book Kitchen scale is a MUST. I love mind and I use it all the time.. everything is measured.
I made Vegan-Gluten Free Banana Nut Muffins which they turned out awesome… I used a regular recipe and converted it and it worked out great (I was worried it would waste of ingredients)..

Oh and as far as memory goes.. I have a pretty good memory… i.e. I was in Paris in 02, I went back with my husband and I could remember everything like back of my hand. But I have to admit when it came to subject in college I always did better in classes that had euqtions and numbers… I never did good in Bio, histroy type classes.

I love the smoothie recipe you posted, I will have to try that, I will need to buy a couple things I dont have that are in it : )
My favorite smoothie is basically a green monster protein smoothie, spinach, banana , peanutbutter, almond milk and vanilla protein powder!!!
