TGIF! Here’s my weekly roundup of lovely food and posts I saw this week in the ‘sphere.
I’ve been watching food, not the Royal Wedding. I think I’m the only person who hasn’t been watching it, but reading blogs has been akin to Wedding Cliff’s Notes. I can catch up on the whole thing just by reading blogs and in 10 minutes not hours. Perfect for me.
Enjoy the food! Or the wedding.
Holly’s Chocolate PB Chip Cupcakes with Peanut Butter Buttercream
And here’s my recipe for Rum Cake Donut Holes (No Bake, Vegan, GF)
Amanda’s Crispy Southwestern Wontons
Emily’s Strawberry Lemonade Thumbprints
Jenny’s Creamy Peanut Butter Chocolate Chip Tart
Joy the Baker’s Carrot Apple Ginger Soup
Brown Eyed Bakers Chocolate Peanut Butter Cup Ice Cream
Great Reads of the Week:
Angela’s Grain of Salt Post addressing reader questions about body-image, weight, and eating topics. Comprehensive, beautiful.
Gena’s post on Eating Disorder “Types” in rebuttal to a Kevin Gianni article
Nicole of La Buena Vida’s photography of Tulum
So many posts, so many blogs, so many great recipes!
There is never enough time to read it all, get to it all, comment on it all, or make it all (unless you are feeding a football team) but the blogosphere is so inspiring.
Thanks for chiming in on my last post about At Home Workouts: DVDs and Podcasts and whether it’s a yay or nay for you, and why. Lots of great comments and split thoughts on it all. Some of you really love DVDs and workouts you can download and it was fun to hear your favorites and what workouts you’re loving lately.
Also loved your workout clothing loves. I always like hearing what everyone’s go-to apparel is. I hate breaking the bank on workout clothes and refuse to do it! No $50 sports bras and I only own one pair of $100 Lululemon pants. Nice, but I will never pay that kind of money again for one pair of pants. I liked hearing what you wear to get your sweat on with.
Questions:
1. What’s on your agenda for the weekend?
I am working, workout out, working around the house, working in the kitchen. Did you catch a them there? But it’s all good. Hard work never hurt anyone.
2. Have you been watching the Royal Wedding Coverage?
No, and I don’t really care! Gasp, I know. What can I say, I love the Kardashians and Real Housewives (E! and Bravo are where it’s at for me and my DVR) and I read blogs, and after that, I have no time for extra tv watching.
3. Have you seen any recipe posts or food posts this week or recently that inspired you or have you made anything lately that you’re especially proud of?
This week, I am proud of my Chocolate Coconut Kale Chips…
…and my Chocolate Coconut Cashew Butter
…but I am inspired by everyone else’s food and recipes, daily!
wow – this is a great collection of recipes I must try!
Like you, I’ve been watching food more so than following the Royal Wedding, but I have been trying to keep up with all of the exciting news.
Do you have any idea how relieved I am to FINALLY find someone else who isn’t obsessed with the Royal Wedding? I was afraid to say anything because I thought I’d have rotten tomatoes thrown at me. Well, I still might. :P
Thanks for linking to so many great recipes! I’m eyeballing the thumbprints as I type :]
Everything looks great! I made your raw gingerbread balls, so good!
Hope all is well, Averie :)
Love these posts, I need to start highlighting my recipe wishlists too because I see so many great ones. You’re not the only one on the royal wedding, I haven’t been either. I just can’t get into it.
So many great recipes here, thanks for the shout out! :-) Yum on the donut holes, wontons, lime rice, tart … well just about everything here!
1. Eating out with friends, niece and nephew bday parties (yikes!), and hopefully relaxing.
2. Nope, I have not at all and agree with you.
3. Yup, many of yours and I will do a post on them soon.
I haven’t been following the wedding either.
My weekend agenda includes one last training meeting before I start my new job on Monday (eek!), cleaning out the fridge, probably laundry, and working on some painting/writing/reading. Oh, and I may attempt a raw vegan cheesecake! Cross your fingers…
i have a raw vegan cheesecake that comes together in about 10 mins after you soak the cashews, it’s a 10 min deal

Yep, I’ll be using that recipe all right. It’s the simplest one I’ve found by far, and simple is good. I’ll let you know how it turns out if I make it!
Aww, thanks for including my salad!!
I’m with you on the royal wedding. I do not see what the big deal is and weddings aren’t my thing.
Thanks to my sociology teacher (who wasn’t able to come to school today), I was able to watch the first 50 minutes of the wedding!
I loved it – Kate looked so beautiful! Her dress was absolutely gorgeous :)
Your food pics never fail to make me drool..
Holy YUUUM, A!
Hahahaha ;)
The chocolate and peanut butter desserts look divine! I may need to bake something tonight!
ah! I was so excited to see my salad up there :) You’re so sweet. GREAT round up of recipes! I totally want to make Maria’s rice and that Creamy Peanut Butter Chocolate Chip Tart looks ridiculous good. Good luck with all the work. I am definitely catching up on house and baby to dos, working out and hopefully relaxing.
still cannot get into your site to comment, but i am reading :)
i always love these posts. Thank you Averie for putting it together. I am in love with them all. Hope you have a wonderful weekend with your sweet family.
you are awesome, lindsay :)
I’m not down with the royal wedding at all. It’s history in the making and that’s really cool, but just not my thing!!! :)
This weekend I am heading to the farmers market with my friend and her baby boy!! Fun… and prepping because my practicum starts on Monday!!
“…or make it all (unless you are feeding a football team)” Oh my goodness, I totally agree! I have so many things I want to try. I don’t know about you but I am bookmarking things constantly. I’ll get to them eventually. I love cooking for my inlaws. 2 parents, 5 kids plus myself and the two other girlfriends of the sons. Plus my kids. It is awesome getting to cook for everyone, but I don’t get to often.
Totally agree about the wedding. I’ve seen a few pictures, and she looks great. I like her dress and all, but seriously, I don’t care. At all. Even if I had TV and it was on at a normal time I wouldn’t have watched it. Just not my thing.
bookmarked, saved in emails, open in browser windows…i have recipes…everywhere! haha! and no football team yet to feed, either. :)
My, what a feast this post is for the eyes. I want one of everything. It all looks so good.
I did watch the royal wedding this morning. It only happens every thirty years or so, that we all get a glimpse of Cinderella. :-)
Thanks for sharing all the lovely links.
not the only one. i could not care any less about the wedding.
glad im not alone in the wedding stuff :)
All of that food looks delicious — and I just love Snickers salad. I could eat that every day.
I watched a bit of the Royal Wedding stuff this morning as I ate breakfast and I’ve seen plenty of stuff on blogs but that is about it.
Have a nice weekend Averie!
