Microwave Blueberry Banana Oat Cakes

This recipe is a spinoff of my Biggie Microwave Banana Oat Cakes

But with blueberries.  

Mmmm, I love blueberries!

Microwave Blueberry Banana Oat Cakes

Microwave Blueberry Banana Oat Cakes

Ingredients:

1 ripe medium or large banana, mashed

1/2 c dry oats (or a little more if you have an especially big banana)

1/4 c brown sugar (reduce as desired, or omit entirely, or replace with stevia)

1 Tsp Cinnamon (more if you love it)

1/4 c blueberries (frozen or fresh)

Optional: Dash of Vanilla Extract, 1 Tbsp of Chia Seeds, 1 Tbsp of Coconut Flakes, 2 Tbsp of Cocoa Powder for a chocolate banana cake

Directions:

Mash the banana

Add everything else except the blueberries and stir to combine.

Then, gently fold in the blueberries.

Spray a clean bowl with cooking spray and put the batter in it

Microwave for 3.5 to 4.5 minutes.  You will know when it’s done because it will not be “juicy” looking anymore and it may have some “holes” on the surface.

After mircowaving, allow to rest for a couple minutes.  Eat in that bowl or easily invert/remove from bowl and re-plate it, or take as a to-go snack.

Top with more blueberries, syrup, jelly, agave, nut butter, raisins, nuts, seeds, dried fruit, or nothing.

This is a fast breakfast or portable snack-cake.  Wrap it up and take it with you if you’re in a hurry.

Just be careful of all that blueberry juice staining your hands if you don’t use a fork.  There are worse problems to have, though.

Except Skylar took the bigger half and devoured most of it in record time.  Blueberry stained fingers and all!

From my last post on Fun & Productive, it was good to hear what you’ve done this weekend that’s been fun.  Or productive.  Or both.

Another take on blueberries + oats are these Muffins: Blueberry Streusel Muffins (Vegan and GF).

Baking rather than microwaving.

One bowl and a spoon, no mixer required.  Nothing fancy or complicated about this recipe.

Someone always comment that they either don’t have a microwave or hate it.  So you can use the oven for these.

Questions:

1. Best thing you’ve ate or done over the weekend?

Spending time with Scott and Skylar and splitting a blueberry banana oat cake.

2. Any Valentine’s Day plans?

Nope.

3. Do you like blueberries?

I love blueberries!  They are so expensive to buy out of season (and really, how long is blueberry “season”) but Trader Joe’s has decent prices on fresh year round.  Of course, all stores have frozen berries year round.

4. Fresh or Frozen?  What do you use and when?

I never use fresh berries or fresh fruit in recipes unless it’s over-ripe or needs to be used up.

I bake, cook, or blend (smoothies) with frozen produce.

I save the fresh for eating!

  1. The pictures in this post are gorgeous! And those blueberry cakes look sooo good. I need to try making them without sugar (sadly, I am definitely super sugar-sensitive, boo! you are so lucky sugar is not a problem) with maybe some stevia. I will likely replace sugar with some ground up chia seeds to make up for the volume of sugar missing.

    1. I just edited the recipe and you really dont need to “replace” with anything…just cook a little longer, add a pinch more oats, b/c this recipe isnt a precise & exact science or anything :)

  2. I also discovered that using frozen blueberries in recipes yields a MUCH better (and prettier!) result than fresh! For example, in baking muffins, you get to squeeze in a zillion more berries using frozen because Trader Joe’s organic frozen blueberries are teeny-teeny-tiny. Using frozen also results in that wonderful diner/bakery-style, stained-the-wrapper-blue muffin that fresh just doesn’t seem to do. I also wanted to mention how much I appreciate that you link back to old posts, discussions, and recipes. It’s extremely helpful for times when I need to catch up and saves a lot of time — thanks for always doing that!

    My husband and I are celebrating Valentine’s day today — we had breakfast in bed, watched a movie, and are eating lots of home baked goodies while snuggled up reading together. He has some sort of surprise to take me to tonight, supposedly low key and quiet. Perfect way to end the weekend.

    I love fresh fruit!! and recently got a dehydrator and decided.. fresh fruit is best. But I use frozen fruit for my protein shakes and smoothies. My favorite are raspberries.. they are cheaper to buy frozen anyway..

  6. Hi Averie! After reading your blog for several months now daily, I decided to finally tell you how much I enjoy it! I love your honesty, creativity, and kindness. Your recipes are yummy to boot! I have made the kale chips several times now and they get devoured by my family as well! I love your thoughts on food allergies as well – I have celiac and haven’t eaten gluten for at least ten years. It was challenging at first, but now it is just my lifestyle, and the way I need to eat to be healthy for my body. That is difficult to explain to people sometimes who cannot even begin to imagine what life would be like without their cereal, bagel, or sugar-packed muffin in the morning! I don’t feel like I am missing out at all, and this site has helped to me explore new treats – like your raw date/cashew chews – yum-o!

    Recently, I have been breaking out on my forehead like never before. I’m 23 and went to see my skin doctor who told me to stop eating dairy. I guzzle milk, and love cheese, so this has been very hard for me. Any suggestions? I am already 100% gluten free, and eat very little-to-no meat or sea food. I do love scallops when out to dinner, egg whites all the time, and skim milk. I have been 3-days without the dairy and it is hard!! I guess I have got to focus on what I CAN have and not on what’s absent! I would like to try the vegan diet but giving up these last few pleasures is proving challenging! Tonight I am planning to make some bean burgers, we’ll see how that goes! Have a lovely rest of your weekend in sunny california and keep up the great posts!

      it’s the protein in milk (casein) that has an opiate-like (morphins) quality rendering people truly addicted to dairy. Once you get past the initial stages it will get way easier to stay away from dairy if you choose to.

      I think your doctor is onto something…worth a try to see how it goes.

  8. I adore blueberries….it’s a family tradition here to pick our own! Every July 4th weekend we go visit my grandparents in SC and go to a local blueberry farm and spend a couple of hours picking(and ahem…eating). Then we freeze them in gallon bags to last us the whole year!

    We first went when I was probably 10 years old and the blueberries bushes(trees?) were only about knee height and I remember crouching to pick them….Now they’re well over my head…I’d bet at least 8-9 feet tall.

  9. I love blueberries so much! But like you I buy frozen when they’re not in season because they are usually way too expensive.
    Another reason why I can’t wait for summer, berry season :)
