Giant Chocolate Chip Cookie for One
Recently I made these One-Bowl, No-Mixer, No-Chill Oatmeal Cookies and that recipe is awesome for so many reasons, which are self-explanatory given the title. But it makes a dozen cookies and not that I wouldn’t love a dozen cookies all the time, but my waistline doesn’t need a dozen cookies all the time. Enter: this fast and easy single serving chocolate chip cookie recipe with built-in portion control.
There’s only one bowl to wash, no mixer to drag out, and no waiting around for dough to chill. The buttery extra-large cookie has chewy edges, a soft center, and is loaded with chocolate in every bite.
You can eat the whole the whole thing yourself, handle your chocolate chip cookie craving, and not have another oodles of other cookies staring back at you from your counter, begging to be eaten (especially when you’re watching mindless tv late at night).
The cookie is big enough to share. I put my hand next to it (I have long fingers and a fairly large hand โ I’m 5’10”) to show you how big it is.
But let’s be real, you’re not sharing this. Just like you’re not sharing this One-Minute Microwave Brownie, either.
What’s in This Gooey Chocolate Chip Cookie for One?
To make this giant chocolate chip cookie, you’ll need:
- Egg yolk
- Unsalted butter
- Granulated sugar
- Light brown sugar
- Vanilla extract
- All-purpose flour
- Baking soda
- Cornstarch
- Kosher salt
- Semi-sweet chocolate chips
How to Make a Giant Chocolate Chip Cookie
Add the egg yolk, sugars, vanilla, and butter to a bowl and beat until smooth and slightly fluffy. Then, stir in the dry ingredients.
Shape the cookie dough into a large ball and place onto a Silpat-lined baking tray.
Bake the single serving chocolate chip cookie until the edges have set and the top is just set, even if slightly undercooked, pale, and glossy in the center.
Can I Omit the Cornstarch?
Cornstarch keeps the cookie softbatch-style soft and tender and I definitely recommend it. However, if you don’t keep it on hand it can be omitted, noting you will compromise a bit of softness.
Can I Make a Small Batch of Chocolate Chip Cookies Instead of Just One?
I’m sure you can, although you’d need to bake the cookies for less time since they’d be far smaller. You can probably squeeze 3 regular-sized cookies out of this giant chocolate chip cookie recipe.
Tips for Making a Giant Chocolate Chip Cookie
The mound of unbaked cookie dough should be about 1 1/2-inches thick, but because we’re not chilling the dough the cookie flattens and spreads quite a bit while baking.
Just before baking the giant chocolate chip cookie, I like to sprinkle a few extra chocolate chips on top to make it look pretty. You’ve already committed to eating this baby, so why not go all out?
I recommend slightly under-baking the cookie because it just tastes better. Then again, I am not a crispy cookie person at all.

One-Bowl, No-Mixer, No-Chill, Giant Chocolate Chip Cookie For One
Ingredients
- 1 egg yolk from a large egg, discard white or save for another use
- 2 tablespoons unsalted butter, very soft
- 2 tablespoons granulated sugar
- 2 tablespoons light brown sugar, packed
- ยฝ teaspoon vanilla extract
- โ cup + 2 tablespoons all-purpose flour
- ยฝ teaspoon baking soda
- ยฝ teaspoon cornstarch
- ยผ teaspoon kosher salt, or to taste
- โ cup semi-sweet chocolate chips, plus more for adding on top before and after baking if desired (recommended)
Instructions
- Preheat oven to 350F, line a baking sheet with a Silpat or spray with cooking spray; set aside.
- To a large bowl, add the egg, butter, sugars, vanilla, and mix with a spoon aggressively for about 90 seconds, or until smooth and slightly fluffed, i.e. your bicep and shoulder should be burning if youโve mixed well enough.
- Add the flour, baking soda, cornstarch (keeps cookie extra soft), salt, and stir to combine.
- Add the chocolate chips and stir to combine.
- Roll dough in your hands to create a ball. Place ball on prepared baking sheet and flatten about halfway or so that the mound is about 1 1/2 inches thick (because dough is not chilled, cookie will spread and flatten quite a bit while baking). If desired, add additional chocolate chips to the top of cookie (recommended)
- Bake for about 12 to 14 minutes (shorter for softer cookies, longer for more well-done cookies), or until edges have set and top is just set, even if slightly undercooked, pale, and glossy in the center; donโt overbake. Cookie firms up it cools.
- Remove baking sheet from oven, top cookie with additional chocolate chips as desired (recommended), and allow cookie to cool on baking sheet until serving. Cookie is best warm and fresh.

AMAZING!!! Actually, I got the email about the oatmeal chocolate chip cookie first and then went on to this one. Just in case anyone was wondering, one of these cookies = 6 regular sized cookies! I forget what size my cookie scoop is…about a large walnut; it makes 3 inch cookies. I was a little worried about the spread when I put the oatmeal cookie in the oven and THEN saw I was supposed to chill the dough. But, it came out perfectly…not a cowpie to be seen! ( I HATE cowpie cookies!)
Anyway, these two recipes are fantastic! I’ve had to make a promise to myself that if I have a cookie, I have to do my workout! Even then, it’s not an equal trade but that’s something I’m willing to live with. Thanks for sharing!
Thanks for trying the recipe and glad you loved it! I can’t believe you got 6 cookies out of this. I would have probably gotten 2, maybe 3, haha! I usually use https://amzn.to/2wmbEuI and when scooping I overfill it. I would guess yours is a 1 tbsp scoop or maybe even a little less; and mine is an overfilled 2 tbsp scoop. I also have a 4 tbsp scoop which is pretty massive :)
If I’m getting out all of those ingredients, measuring, etc. I’m going to make the a whole batch by as bar cookies. I’ll freeze most!
I just made this and substituted extra virgin olive oil for butter since I didn’t have butter. It was delicious and chocolatey! I’m wondering if i would have been better off using the margarine I had in the fridge though for the butter taste, cause the olive oil tasted kinda funny for a cookie. Also, do you think that’s why my batter was so sticky?

I have baked with olive oil before but it’s a strong-scented/flavored oil for baking and especially in a chocolate chip cookie, I would stick with butter – not oil or margarine – for this recipe. And yes using oil not butter will produce a much more sticky/tacky batter.
Glad overall though that you still had success with the recipe.
For those who questioned the calorie count in the nutrition info…it is definitely way off! :) The calorie count is actually 920 for the entire giant cookie…but like Averie said…if you’re eating a giant cookie are you really thinking about the calories in it?? But, for those who are concerned, the nutrition info is very misleading.

Can cornstarch be added to any cookie recipe?
Yes and no…it’s not a blanket statement that will always turn out perfect results without testing and adjusting the other ingredients accordingly.
Do you measure your flour by the scoop method or the spoon into cup method? this can make a difference especially in cakes .
Generally by scooping out of a bag of freshly fluffed up flour and using a very light hand and never hard-packing.
Under the nutrition for this recipe it says no sugar. Is this correct? Did I miss something?

I believe your nutritional information is way off base. It’s showing 77 calories? And 5 g of fat? The butter alone has more than that. Not that it matters. If you’re eating a giant cookie (and who wouldn’t! It’s only ONE cookie!! ) you’re not likely to care about the calories in it anyway!

A large cookie loaded with chocolate chips—yum!! Just using the yolk is a great idea–it’s hard to get only half of a beaten egg to slide into a bowl when I’ve downsized cookie recipes in the past.
Yes I know exactly what you mean because they egg white sort of holds the egg together, even after you beat it, and it can be tricky to just get what you need and not the whole thing. This is perfect, way too easy, and too convenient actually :)
