Hi Friends!  How are you doing?  I have been so busy trying to tie up the loose ends of life, working full time, parenting full time, and full time packer, organizer, and trip planner and coordinator.  Needless to say life has been busy and simplicity in the kitchen is key.

The following are one-pot meals, or almost one-pot meals/snacks, take less than 30 minutes to make, all vegan, all Gluten-Free, and delish

Mango Balsamic Rice, Beans & Vegetables

Sounds complicated but it takes 15 minutes to make.

This was so good. The flavors were subtle yet definitely Caribbean inspired.  For anyone who doesn’t “love” coconut.  Not to worry, far from eating a bottle of Hawaiian Tropic or anything. I have never cooked rice in coconut milk and had previously been leery but there was no reason to be.
The seasonings were great, and even though it may seem like the PB may not totally work here, it did and it was another layer of flavor.

So easy and such a hit with everyone.  What’s not to love about roasted potatoes, veggies, and cheeze/cheese!

For the chili and soups, I am not the type of cook who says, “first sautee onions and garlic, then do this step, and chop this, then add this or that, and reduce to 1/2 volume, etc.”  Hell no! Throw everything in one pot, all at once, bring it all to a boil real fast, then reduce to a simmer, cover it and forget about it for a half hour or 45 minutes and it’s ready.  Easy!  Less is more, when it comes to steps in a recipe!

Dessert: Raw Vegan Peanut Butter Cookie Dough Balls
You can use Peanut Flour in these if you have it on hand.  And of course, Peanut Butter.  Or almond, cashew, sunflower seed butter, whatever you prefer. They remind me of those candies called Bit-O-Honey.  Remember those? But there’s no honey in the recipe.

Questions
1. What’s your favorite one-pot meal?  Or very fast and easy meal?
I have been enjoying soups and chilis lately.  I pretty much just throw whatever veggies I have on hand in a pot, with some beans, water, seasonings and hope for the best outcome a half hour later.

And I also love salads and fresh veggies.  I never get sick of this one: an Edamame Salad with Romaine, Tomatoes, Cukes.

2. Are you back into the swing of things this week after a long holiday weekend (for many of you)?
I’ll be honest, I don’t know if I’m coming or going!  I’ve been working so much, we were sick over the holiday with colds, I am getting ready for our trip, and yesterday a homeless lady was randomly ringing my doorbell for no reason in the middle of the night! Repeatedly. So I am running on less sleep than normal.  Oh the joys of city living sometimes!

3. Is it chilly where you are?
It’s damn cold here.  Brrr! I know you can all laugh because you think how cold can SoCal be?  Well, it’s not like Minnesota where I grew up, but I am a lightweight these days and it’s plenty chilly here for me.  I don’t enjoy the “change of seasons”.  I enjoy warm weather year round!  haha!

4. How often do you get your teeth cleaned?
I’m off to get my 20 minute at-home workout in and then I am getting my teeth cleaned. I am huge on dental hygiene.  I go every four months, no matter what, to get my teeth cleaned and yes, I pay out of pocket, happily, to have sparkling clean teeth.   There are some things I skimp on, but hair and teeth aren’t it!
