…but I forgot to ask someone to take a pic of the 3 of us!!  So no group shot today….boo-hoo!

Madeline and I gabbed about life.  And Skylar snacked and kept us entertained.

It was awesome catching up with Madeline as it always is, and since we hadn’t seen each other in a few weeks it was extra nice today!

I made a batch of No-Bake Vegan Peanut Butter Protein Bars

and added coconut oil to them

No-Bake Vegan Peanut Butter Chocolate Chip Coconut Oil Protein Bars (no-bake, vegan, gluten-free)
Today’s Batch of No-Bake Vegan Peanut Butter Protein Bars was the exact same as This Recipe, except I added 1/4 c coconut oil.

The addition of the coconut oil makes them solidify and hold together just a little better which I like!

Combine the Oats, Coconut Flakes, Raisins, Choc Chips, Flax & Chia Seeds, Maple, Cinnamon, and Coconut Oil

Don’t Forget The Peanut Butter (or whatever nut butter you prefer!) and Your Favorite Protein Powder (and if you’re not into Protein Powder, that’s fine, you can omit it) and Stir it Up

Freezer Time!

After a few hours in the freezer, I removed the tray and diced the bars, and wrapped them up!

And the flavors of coconut, chia & flax seeds, mashed banana, oats, maple syrup, cinnamon, chocolate chips, well…they are really tasty in combination together!

Just add 1/4 c coconut oil to make them extra delish!

Dinner was A Veggie Bowl:  Mixed greens, sugar snap peas, asparagus, Brussels, Red Cabbage, Tomatoes

For dessert, I decided to make up a batch of Vegan Peanut Butter Softserve!

  2. I made the coconut oil protein bars and they were wonderful! I melted the coconut oil first so it was easy to mix in as I knew it would harden again when I put them into the freezer overnight. Enjoy!
