I realized when I posted my recent recipe for Lemon & Dill Roasted Potato Sticks, that I have lots of potato recipes and I wanted to organize them and make them easier to access.

And as a total unplanned twist, it’s so fitting that this post about potatoes falls on the day before St. Patrick’s Day!  Is that the luck of the Irish, or what?!

Add 1/2 c of cooked sweet potatoes into my Pancakes (Vegan, Gluten Free) for Vegan GF Sweet Potato Pancakes. Omit or reduce the banana in the recipe if you add sweet potatoes.

  1. mouth. is. watering. and btw – do you SEE the difference in your photos?! just thought i’d point that out for you ;) they’re lookin’ great!! must try those lemon and dill fries. they seem so spring/summery, too. perfect!
    Lately, I can’t go more than a few days without some sweet potato wedges! I am all about the wedge lately. Tossed with some olive oil and honey? SO good. Maybe even add in a little curry powder. Orrr, nix the honey and instead throw in some italian seasoning…dipped in BBQ sauce…or hummus…I guess I’m not very picky ;)

    1. well some of the pics are old (and cringe-worthy) but I posted them anyway…b/c i will never be re-making 400+ recipes on my blog just to have pretty pics…haha!

      But the newer ones, yes, they are getting better and I can see it. Not trying to toot my own horn or anything tho b/c clearly, I have a LONG way to go :)

      I would love to pick your brain more about photography b/c I know that you take great shots and I think you work in the field? I should know more about what you do, huh :)

  2. There’s a guy here with a potato boner! If such a thin exists. :-) He just gave me some sweet potatoes as a snack. I don’t eat them in the mass quantities that mr. carb does, but I like a few here and there.

    As for orange on a green day, well my mom always wore orange as a joke because he grandfather was scottish and he had a big rivalry with the Irish and it was a thumb in the nose to wear orange (skottish color) on st. patty’s.

  3. your post before this reminded me that tomorrow is st pattys day and i wore my green sweater yesterday! haha i guess i’ll celebrate by eating green goodness. i guess that means i celebrate st. paddys day every day?

    ANYWAYS. i’ve been LOVING kabocha squash lately and orange sweeet taters. i’m not a fan of regular potatoes i think they’re super bland buttttt give me a sweet tater and i’m in heaven!

  4. Potatoes! I have eaten more than a lifetime’s worth and I’m only 23. :P My mom used to make mashed potatoes and gravy almost every night for supper. Luckily, we also ate plenty of other foods so I’m not obese and I don’t have any health problems. :) But I still love my potatoes!!

    The easiest and most simple way that I prepare them for myself and my boyfriend is roasted! Just chop up your potatoes and throw them in a bowl with a little bit of olive oil, diced fresh garlic, and diced fresh rosemary. Toss so it is evenly coated and spread them on a cookie sheet that has already been covered with tinfoil (makes clean up so much easier, don’t have to wash an oily cookie sheet), and bake for about 30-40 minutes. :)

    If you haven’t had the rosemary/garlic/olive oil combination when it comes to roasted potatoes, then I really suggest you give it a try! :)

  5. I looooooooooove potatoes!! I haven’t found a way I don’t like potatoes, they’re so darn fluffy and carby, in other words, perfection. :) Oh, and filling! I don’t care how they rank on the Glycemic Index, they keep me full for half a day and that’s saying a lot! lol

  6. oh I do love potatoes esp sweet potatoes! if I were to have a regular idaho potato my favorite is roasting them with dill or rosemary and having the edges get all crispy and delicious like baked fries! so good!!!!
    I know you have seen my current obsession which is sweet potatoes with coconut oil OMG so good!

  11. Yes I love potatoes — we eat mostly sweet but every once in a while I’ll roast up a bunch of red potatoes or fingerlings. I love those.

    I will have to try your microwave cake w/sweet potato — that sounds delicious!

  12. My favorite potato recipe is my sweet potato pudding! Or just plain sweet tater in my salad mmmm yummy!

    Baby red potatoes fresh from the garden are pretty darn great, too!

  13. What an awesome post! I feel that potatoes get a bad rep as being “plain,” but you’ve definitely proved that it’s a cinch to spice them up! Love the idea of roasting with coconut oil… I really have to try that.
