Making roast beef sliders is very easy with minimal prep time. After all, sliders are just smaller sandwiches โ€“ at least thatโ€™s how I think of them. And making sandwiches isnโ€™t rocket science.

Follow these easy and straightforward instructions for the best roast beef sliders.

Step 1: Slice and place the Hawaiian Original Sweet Rolls in a baking pan.

Step 2: Saute green peppers and onions in a bit of olive oil in a skillet.

Step 3: Add the roast beef, garlic salt, and cook for another 3 minutes.

Step 6: Add the tops of the Hawaiian sweet roll slider buns and brush with a mixture of a few tablespoons of melted butter, Worcestershire, and sprinkle garlic.

Step 7: Wrap with aluminum foil and bake for about 15 minutes.

Step 8: Remove the foil and bake for 5 more minutes, or until lightly golden browned on top before serving. Cooking time will vary a bit based how toasted you like your buns.

Want To Dip Your Sliders?

Mustard of any kind from yellow to spicy brown, Dijon mustard, or grainy are all great dips.

Horseradish, horseradish mayo, or another horseradish sauce are also nice if you want an extra punch of bold flavor.

If you want to make beef au jus, by all means do it if you love extra juiciness and want more of a French dip sliders recipe. However I don’t find this necessary because these sliders are very juicy and finger licking good as-is!

What Kind of Roast Beef Is Best for Sliders?

I use thinly sliced roast beef from theย deli counter inside my grocery store. You need one pound. This is fast, easy, and foolproof.

The other option is buying it prepackaged, also likely from the deli area of the grocery store. This is perhaps a bit cheaper but I think the taste and quality is better if you have them slice it for you but do what’s best for you.

If you have your own homemade roast beef on hand, by all means use it.

Can I Use Another Type of Meat?

As an alternative, you can also use pulled pork such as my Slow Cooker Pulled Pork or Slow Cooker Cherry Cola Pulled Pork.

Another idea is corned beef or sliced deli ham. Although if you’ve got ham on the brain, I’ve got just the recipe for you!

What to Serve with Roast Beef and Cheese Sliders

Roast beef sliders on Hawaiian bread are great even if you donโ€™t serve them with anything else, or maybe just some potato chips or pickles on the side.

Storing Extra Beef Sliders

Sandwiches of any kind are best made and eaten fresh.

If you do have extra sliders, they will keep airtight in the refrigerator for about 3 days. I’ve never stored them in the freezer.

Note that the Hawaiian rolls will get soggy as time passes. There is nothing to be done to avoid it – it’s just the nature of a juicy sandwich over time and the bread it’s on.

WHAT KIND OF ROLLS ARE BEST FOR roast beef SLIDERS?

When making baked roast beef sliders, I highly suggest soft Hawaiian rolls. Theyโ€™re slightly sweet, which pairs perfectly with the savory nature of the roast beef and Provolone cheese.

I am a big fan ofย Kingโ€™s Hawaiian Original Sweet Rolls. In my opinion, thereโ€™s really no substitutions for that brand. Iโ€™ve never tried a generic or store brand.

CAN roast beef sliders BE MADE IN ADVANCE?

If you want toย make them in advance of a get-together or event, you can potentially saute the green peppers and onions, then add the roast beef and garlic salt and saute, and then store that mixture in an airtight container in the fridge until you’re ready to bake them off with the cheese and butter mixture brushed on top.

To me, this is “more trouble than it’s worth” but to each her own if you’re super pressed for time before an event. Do not assemble the sliders and then wait to bake them. The buns underneath will get very soggy.

Do i have to slice or dice the roast beef?

I diced my roast beef for ease of sauteing it with the green peppers and onions. Although you don’t have to dice it and can keep it in whole slices. If you choose to go this route, it will be more difficult sauteing whole slices of meat with the peppers and onions, and you may just want to simply layer on the roast beef loosely in the buns with the other ingredients. Do i have to add green peppers and onions?

Technically no, you can make an extremely basic version of roast beef sliders by only using roast beef, cheese, and the buttery garlic mixture brushed on top. However, you will be sacrificing flavor and texture.

If you are not a green pepper fan, but would prefer another color of bell pepper, feel free to use yellow, orange, or even red bell peppers.

Should I bake roast beef sliders with cheese?

I highly recommend baking your roast beef sliders so the cheese melts. For me, there is nothing better!

How long should sliders bake in the oven?

The roast beef Hawaiian roll sliders need to bake at 350F, covered, for 15 minutes. Then remove the foil and bake for another 5 minutes. So that’s 20 minutes total at 350F.

Can i substitute another type of cheese?

If you don’t have Provolone on hand or aren’t a fan of it, another basic and easy-melting cheese such as sliced mozzarella cheese is a great swap. Additionally, Havarti cheese is lovely and melts fantastically, although it’s pricier than mozzarella or Provolone.

Cheddar cheese, Colby, or Parmesan would not be ideal choices in my opinion. They don’t melt as well as the aforementioned and you want a “pizza cheese” type of cheese that melts well and gets really gooey.

Ingredients 

  • 12 count package King’s Hawaiian Original Sweet Rolls
  • 1 tablespoon olive oil
  • 1 large green pepper, seeded and diced small
  • 1 yellow or white onion, diced small
  • 1 pound thin-sliced deli roast beef, diced or cubed*
  • 1 teaspoon garlic salt, garlic powder may be substituted
  • 12 slices Provolone cheese, sliced mozzarella or Havariti may be substituted
  • 4 tablespoons unsalted butter, melted
  • 1 teaspoon Worcestershire sauce
  • 1 teaspoon minced garlic, or to taste

Instructions 

  • Preheat oven to 350F and spray aย 9 x 13" baking dishย or baking pan with cooking spray.ย Tipย – If you're using a metal baking pan, I like to line my pan withย nonstick foilย for easier cleanup.
  • Either slice theย Hawaiian rollsย in half horizontally so you will have a bottom "slab" and then a top "slab" OR separate the rolls and slice each one and a half horizontally.ย Noteย – I find the first "slab" method easier because you don't have to be as precise about the placement of the remaining ingredients. However, slicing the final baked sliders is a bit easier with the second method.
  • To a large skillet, add the olive oil, peppers, onions, and saute over medium-high heat for about 5 minutes, or the vegetables are softening and becoming translucent; stir frequently.
  • Add the roast beef, garlic salt, stir to combine, and saute for another 2 to 3 minutes; stir frequently.
  • Evenly distribute the mixture over the bottom of all the Hawaiian rolls in the baking dish.
  • Evenly top with cheese.
  • Place the tops of the rolls over the cheese; set aside momentarily.
  • To a small microwave-safe bowl, add the butter and heat on high to melt, about 1 minute.
  • Stir in the Worcestershire, garlic, and brush the mixture evenly over the tops of the buns.
  • Cover tightly with foil and bake for 15 minutes.
  • Remove the pan from the oven, take off the foil, and bake for about 5 minutes more, or until the tops of the buns are as lightly golden browned as desired. Tip – Hawaiian bread is soft and has a fair amount of sugar in it so it will be more prone to burning. Watch the tops of the buns closely so they don't get too done or burn.
  • Remove from the oven and serve immediately. Sliders are best fresh but will keep airtight in the fridge for about 3 days, noting that the buns will become soggier as they sit.

Notes

*While it is not technically necessary to dice or cube the roast beef, it makes sauteing it with the pepper and onions much easier. If you choose to keep it in whole pieces, you may want to consider not sauteing and simply piling it loosely on top of the pepper and onion mixture after you have that laying on the bottom half of the buns.
I prefer thin-sliced roast beef from the deli counter at my local grocery store. Although pre-packaged roast beef, homemade roast beef, Pulled Pork, corned beef, or deli sliced ham will also work.
