Low-Fat, Low-Calorie Mozzarella Sticks

The words “skinny” and “cheese sticks” normally don’t go together. Except here they do because these cheese sticks are only 110 calories each!

Rather than being fried, they’re baked, and yes, there are only two ingredients. Egg roll wrappers and low-fat mozzarella string cheese.

They’re crispy on the outside, soft and gooey on the inside. It’s impossible to say no to luscious melted cheese.

They make a convenient after-school snack for kids or a satisfying midnight snack for mommies. Or a perfect game-day snack for all the Super Bowl fans. Something lighter can’t hurt.

Comfort food, with a skinny twist, so you can still indulge without the bulge. And infinitely more satisfying than those store-bought 100-calorie snack packs. No comparison.

Ingredients for Healthy Mozzarella Cheese Sticks

Because we aren’t frying these baked mozzarella sticks, there’s no need for complicated ingredients with these healthy cheese sticks. Here are the two items you need:

  • Low-Fat or Part Skim Mozzarella String Cheese
  • Egg Roll Wrappers (also known as wonton wrappers) – You can usually find these in the refrigerated section of most local grocery stores. You’re looking for wrappers with flour as the first ingredient, not to be confused with shelf-stable rice paper wrappers, for making fresh spring rolls, usually found in the ethnic foods aisle on a shelf

Note: Scroll down to the recipe card section of the post for the ingredients with amounts included and for more complete directions.

Want Extra Crispy Mozzarella Sticks?

To help them brown up and get a bit crisper, spray the wrappers with a fine misting of olive oil. Just a teeny tiny bit. Non-stick cooking spray or something like the Misto Olive Oil Sprayer works great, and you can keep the calories and fat way down with either option.

Alternatively, brush them very judiciously with olive oil. You don’t want to submerge these skinny sticks with an oil slick and defeat the purpose!

How to Make Baked Mozzarella Cheese Sticks

This is hardly even a ‘recipe’ because it’s so fast and easy. Just roll up your string cheese in a wrapper and bake for about 15 minutes or until the cheese is melty!

  1. Place a cheese stick about 1 inch from the margin of the egg roll wrapper, fold the sides in, and roll up as tightly as possible. Take care to wrap the cheese sticks really well with the egg roll wrappers. The wrapper should be doubled up around the cheese stick to prevent the cheese from oozing out as it bakes.
  2. Place cheese sticks bundle seam-side down on a lined baking sheet tray.
  3. Optionally spray or brush with olive oil.
  4. Bake for 10 to 12 minutes. Optionally, spray with additional olive oil spray, and flip the cheese sticks over.
  5. Return to oven and bake for another 5 minutes or until golden brown all over.

Recipe FAQs

CAN RICE PAPER WRAPS BE USED INSTEAD OF EGG ROLL WRAPPERS?

I think rice paper would be really thin, and you’d have to use a few to wrap them up or the cheese will try to ‘explode’ when it gets warm and expands. So, rice paper might work but I can’t say for certain.

WHAT DIPPING SAUCE IS BEST FOR HEALTHY MOZZARELLA STICKS?

Use either pizza sauce or marinara sauce (I’ve linked my two homemade recipes, but store-bought works fine too!). Ranch dressing is also a popular option!

Can I make these low-fat mozzarella sticks in an air fryer?

Possibly, but I’ve only ever baked this recipe so I can’t say for certain. However, I have an air fried mozzarella cheese stick recipe on my site that you can make! It’s a traditional breaded version but the air fryer keeps the cheese sticks lighter.

Why did the cheese ooze out of the egg roll wrappers?

If the mozzarella keeps oozing out of its wrapper in the oven, it’s likely that your wonton wrappers were a little on the skimpy side. I was sure to really bundle mine up, wrapping them like logs, around and around, with the wrapper. If you don’t double up the wrapper the cheese oozes out.

Can I store leftovers?

This recipe is best served right away. However, if needed, you can transfer leftover cheese sticks to a Ziplock bag or airtight container, and store them in the refrigerator for up to 1-2 days. Reheat them in the air fryer or oven to keep them crisp, or quickly warm them in the microwave.

Can I make this recipe with breadcrumbs instead?

You can, but I recommend making my air fryer mozzarella sticks instead. It uses flour, bread crumbs, parmesan cheese, garlic powder, onion powder, and other seasonings for a more classic recipe.

I wanted to make something different for our neighborhood Halloween party tonight and these have been a huge hit (there is one left)!

Equipment

  • 1 Baking Sheet

Ingredients

  • 1 eggroll, or wonton wrapper (56 calories)
  • 1 low-fat mozzarella sting cheese stick, 50 calories
  • olive oil cooking spray, Misto-sprayed olive oil

Instructions

  • Preheat oven to 400F.  Line a baking sheet with a Silpat or spray with cooking spray; set aside.
  • Place cheese stick about 1 inch from the margin of the wrapper, fold the sides in, and roll up as tightly as possible. Place the bundle seam side down on baking tray.
  • Optionally, very lightly spray or brush with olive oil.
  • Bake for 10 to 12 minutes and remove tray from oven.
  • Optionally, spray/brush with additional olive oil and flip stick to ensure it browns evenly on both sides.
  • Return to oven and bake for about 5 to 8 additional minutes, or until golden brown or done to taste. Of the 8 sticks I made, 1 stick had cheese burst through the center of the wrapper, a little ‘explosion’ from the internal pressure as the temperature rose and the cheese melted. Keep an eye on your sticks in the final moments of baking, and if you notice any leaking or bursting, remove from oven immediately.

Notes

Sticks are best warm and fresh; serve immediately. I served with marinara sauce; use your favorite dipping sauce or none at all.

  1. Love this recipe, this is such an amazing and delicious idea, not to mention that it’s baked!

  2. This is such a smart idea! I can’t believe what an easy appetizer these are, pinned! It’s amazing how simple meals using very few ingredients are more often than not better than the complicated ones.

  3. Mind = Blown. These cheese sticks look out of this world, Averie! Awesome idea—I would have never thought to put my string cheese in egg roll wrappers! So trying this. Pinned!

    1. I almost never buy string cheese. It seems so wasteful? All those single-serving sticks in all that packaging so Skylar was extra pleased when I had this recipe in the works :)

  4. Theses would not last long around here at all! Boyfriend and I both love mozz sticks and I love the healthier and even simpler factor of these ones!

  5. These are my kind of cheese sticks! I haven’t used wonton wrappers in ages–what a great idea (and so much healthier and easier than the battered, deep fried version). Jon would love these and appreciate the skinny factor as well. And yes, they are the perfect accompaniment to a bowl of marinara!! I made a tortilla pizza yesterday with my homemade marinara and kept spooning more into a ramekin to eat while the pizza baked.

    1. Oh I just made something with 2 cups of marinara today! But based on my flow, the recipe won’t go live for probably a month. But gosh, it was savory, and it was good and I know you’ll like it when it rolls around :)

And that’s cool that both you AND Jon can appreciate the skinny factor. So many guys ‘don’t care’ but that mentality only lasts so long as about the early 30s I think when metabolism seems to slow down and turn off! I’m jealz of your homemade marinara. I need to make some!

  6. lovelovelove the idea of using an eggroll wrapper! I am dying over that melty cheese, paired with the crunchy (but healthy!) coating.
I am not really a super bowl watcher, buuuuut I’ll eat these for my dinner anyway!

    1. Im so not a Superbowl watcher either. I have no idea who’s in it, don’t care, I try to spend as much money as I possibly can that day at the mall. I mean, I take my job seriously :)

  7. This would be a perfect Super Bowl snack. Mostly because I could forget that I’m stuck watching the Super Bowl and focus on cheese instead.

    1. Im so not a Superbowl watcher. I have no idea who’s in it, don’t care, I go to the mall, and spend a ton of money. It’s PERFECT! You’d be surprised how PACKED the mall is too. So many ladies have my idea, too, I think :)

  8. Averie, I love this! This was one of my favorite snacks as a kid, except of course we made the full fat version (deep fried with full fat cheese). I recently had some, and now will definitely be making them this way!

    1. Ok if you try them, LMK! And yes, the full fat, deep fried ones are great. If you have a child’s metabolism. After that, well, you know :)

  9. I love this! Such a different way to achieve crunchy oozy goodness with out the work. I am not a diet person, in fact I have a diet of child but I would down these in instant because they look that moreish!
Simple divine Averie, you come to save the world from boring ” low fat/diet recipes”

    1. save the world from boring โ€ low fat/diet recipesโ€ <--- thank you! And you are so right. There are so many BORING, bland, tasteless, blah lite options out there, that I'd rather just eat air than eat some of the crap that people try to pass off as 'good tasting'. Meh, not so much. And 'the diet of child'... LOL

  10. You are so right. It IS impossible to say no to luscious melty cheese. Nice that that cheese can be a wee bit on the healthier side!

    1. Hmm 110? My farm rich frozen mozz sticks are 180 for 2 so about 90 calories. I heat mine up in microwave like 1-2 minutes tops and done. So for the baked ones I’m taking 15 minutes to save 70 calories. And 70 since I eat 2 at a time most times and 4 if as a meal.
I don’t find this worth it. 15 minutes for 2 sticks is time out the door for me. Idk I am not the only one busy Im sure. I would just eat the 70 extra calories and park farther from the door in parking lots (I usually find closest spot haha) so I’m sure for mozz sticks I will burn the 70 calories through something.
Calories do add up but only if your not tracking them closely or accurately. I just don’t see the value. I guess if I want 4-6 and have time it may be worth it then theres low fat vs full fat.
Full flavor for 70 calories more and being able to just burn that off with extra activities here then seems far worth it then having to wait 15 minutes for low fat something. I know this won’t please everyone and I am that person but oh well LOL Thnx for posting but no thanx.
