Low-Fat, Low-Calorie Mozzarella Sticks

The words “skinny” and “cheese sticks” normally don’t go together. Except here they do because these cheese sticks are only 110 calories each!

Rather than being fried, they’re baked, and yes, there are only two ingredients. Egg roll wrappers and low-fat mozzarella string cheese.

They’re crispy on the outside, soft and gooey on the inside. It’s impossible to say no to luscious melted cheese.

They make a convenient after-school snack for kids or a satisfying midnight snack for mommies. Or a perfect game-day snack for all the Super Bowl fans. Something lighter can’t hurt.

Comfort food, with a skinny twist, so you can still indulge without the bulge. And infinitely more satisfying than those store-bought 100-calorie snack packs. No comparison.

Ingredients for Healthy Mozzarella Cheese Sticks

Because we aren’t frying these baked mozzarella sticks, there’s no need for complicated ingredients with these healthy cheese sticks. Here are the two items you need:

  • Low-Fat or Part Skim Mozzarella String Cheese
  • Egg Roll Wrappers (also known as wonton wrappers) – You can usually find these in the refrigerated section of most local grocery stores. You’re looking for wrappers with flour as the first ingredient, not to be confused with shelf-stable rice paper wrappers, for making fresh spring rolls, usually found in the ethnic foods aisle on a shelf

Want Extra Crispy Mozzarella Sticks?

To help them brown up and get a bit crisper, spray the wrappers with a fine misting of olive oil. Just a teeny tiny bit. Non-stick cooking spray or something like the Misto Olive Oil Sprayer works great, and you can keep the calories and fat way down with either option.

Alternatively, brush them very judiciously with olive oil. You don’t want to submerge these skinny sticks with an oil slick and defeat the purpose!

How to Make Baked Mozzarella Cheese Sticks

This is hardly even a ‘recipe’ because it’s so fast and easy. Just roll up your string cheese in a wrapper and bake for about 15 minutes or until the cheese is melty!

  1. Place a cheese stick about 1 inch from the margin of the egg roll wrapper, fold the sides in, and roll up as tightly as possible. Take care to wrap the cheese sticks really well with the egg roll wrappers. The wrapper should be doubled up around the cheese stick to prevent the cheese from oozing out as it bakes.
  2. Place cheese sticks bundle seam-side down on a lined baking sheet tray.
  3. Optionally spray or brush with olive oil.
  4. Bake for 10 to 12 minutes. Optionally, spray with additional olive oil spray, and flip the cheese sticks over.
  5. Return to oven and bake for another 5 minutes or until golden brown all over.

Recipe FAQs

CAN RICE PAPER WRAPS BE USED INSTEAD OF EGG ROLL WRAPPERS?

I think rice paper would be really thin, and you’d have to use a few to wrap them up or the cheese will try to ‘explode’ when it gets warm and expands. So, rice paper might work but I can’t say for certain.

WHAT DIPPING SAUCE IS BEST FOR HEALTHY MOZZARELLA STICKS?

Use either pizza sauce or marinara sauce (I’ve linked my two homemade recipes, but store-bought works fine too!). Ranch dressing is also a popular option!

Can I make these low-fat mozzarella sticks in an air fryer?

Possibly, but I’ve only ever baked this recipe so I can’t say for certain. However, I have an air fried mozzarella cheese stick recipe on my site that you can make! It’s a traditional breaded version but the air fryer keeps the cheese sticks lighter.

Why did the cheese ooze out of the egg roll wrappers?

If the mozzarella keeps oozing out of its wrapper in the oven, it’s likely that your wonton wrappers were a little on the skimpy side. I was sure to really bundle mine up, wrapping them like logs, around and around, with the wrapper. If you don’t double up the wrapper the cheese oozes out.

Can I store leftovers?

This recipe is best served right away. However, if needed, you can transfer leftover cheese sticks to a Ziplock bag or airtight container, and store them in the refrigerator for up to 1-2 days. Reheat them in the air fryer or oven to keep them crisp, or quickly warm them in the microwave.

Can I make this recipe with breadcrumbs instead?

You can, but I recommend making my air fryer mozzarella sticks instead. It uses flour, bread crumbs, parmesan cheese, garlic powder, onion powder, and other seasonings for a more classic recipe.

I wanted to make something different for our neighborhood Halloween party tonight and these have been a huge hit (there is one left)!

Healthy Mozzarella Sticks

Equipment

  • 1 Baking Sheet

Ingredients  

  • 1 eggroll, or wonton wrapper (56 calories)
  • 1 low-fat mozzarella sting cheese stick, 50 calories
  • olive oil cooking spray, Misto-sprayed olive oil

Instructions 

  • Preheat oven to 400F.  Line a baking sheet with a Silpat or spray with cooking spray; set aside.
  • Place cheese stick about 1 inch from the margin of the wrapper, fold the sides in, and roll up as tightly as possible. Place the bundle seam side down on baking tray.
  • Optionally, very lightly spray or brush with olive oil.
  • Bake for 10 to 12 minutes and remove tray from oven.
  • Optionally, spray/brush with additional olive oil and flip stick to ensure it browns evenly on both sides.
  • Return to oven and bake for about 5 to 8 additional minutes, or until golden brown or done to taste. Of the 8 sticks I made, 1 stick had cheese burst through the center of the wrapper, a little ‘explosion’ from the internal pressure as the temperature rose and the cheese melted. Keep an eye on your sticks in the final moments of baking, and if you notice any leaking or bursting, remove from oven immediately.

Notes

Sticks are best warm and fresh; serve immediately. I served with marinara sauce; use your favorite dipping sauce or none at all.

  1. I was wondering if you could use the rice paper instead of the wonton wrapper? I am looking for gluten free for family/friends.

    1. I think rice paper would be really thin, you’d have to use a few to wrap them up or the cheese will try to ‘explode’ when it gets warm and expands. You have nothing to lose but trying!

  2. I just made these. Your look so good. Mine, not so much. The cheese oozed out on the pan, so the wrapper was almost empty when I got them out. I used a timer so not sure why they did that. But they were super easy to do and, yeah, I ate them anyway. So, I will try again. Less heat and same time, or same heat and less time?

    1. I’m not sure why yours oozed, it’s hard to say. Could be the cheese, the brand of wrappers, the heat, or the rolling technique. I would try to make really tight bundles next time and I have a feeling that will help!

  3. I made these last night so we could have some healthy Super Bowl snacks – the only wonton wrappers I could find were small, so I had to cut my cheese sticks in half. I checked on them about halfway through their cooking cycle & the cheese had completely oozed out! :( any tips? They were still yummy, but not as cheesy as I wanted…

    1. Sounds like your wonton wrappers were maybe a little on the skimpy side. I was sure to really bundle mine up, wrapping them like logs, around and around, with the wrapper. Because if the wrapper isn’t doubled/tripled up, due to the natural laws of expansion when something is heated, the cheese will come out. So just make sure they’re very well wrapped next time. That would be my tip. Even with being very well-wrapped, sometimes I’ll have a leaker. It happens. You could fry them. That will curtail it; but that also adds a pound of grease… :)

  4. This is a great idea and looks delicious but I wish you and other bloggers would source your recipes. This is not a new idea and a quick google shows that many other bloggers have done this already. It bums me out that nobody thinks it’s important anymore to acknowledge that they weren’t the first to think of something.

    1. I honestly had only ever seen them fried, not baked. If I use someone else’s idea *that I knew of* I source/cite them. I don’t make a habit of checking google for every single recipe that pops into my head beforehand to see if someone else made it or something close to it. If I have the idea, I roll with it. If I saw it somewhere else, I cite it.

  7. My sister is going to love you forevvaaaah. What pizza & donuts are to me, mozzarella sticks are to her. SHE LOVES THEM and always seems to be in the mood for them ;) who can blame her? Fried cheese is awesome! But this skinnier version is MUCH more diet-friendly obvi and looks every bit as sinful and delish as the normally high-fat cousin. Love that they’re just two simple ingredients! SO easy. And I kinda hate you for linking up those mac and cheese bites because OH MY GOD, those were crazy good!

  10. How easy is this?! I love the baked version too. I fry mine and it’s always a hot mess, and then there’s that littering oil smell in the house all. day. long.

    1. The MAIN reason I dont fry things isn’t because I have a big opposition to the grease (I mean, yeah it’s bad, but whatever), but it’s the STENCH that lingers for AT LEAST 3 days. Nothing, nothing, nothing is worth a stinky house for that long!
