Summer means grilling season, and I am always looking for new and interesting marinades that pack a ton of flavor but are super easy to whisk together with ingredients you have on hand.
And this is exactly that type of marinade and recipe.
I used the recipe for Spicy Garlic Mustard Marinade that I recently made because it helps keep the chicken so tender, juicy, delivers so much flavor, and you whisk the ingredients together in a flash.
Another added bonus with this garlic chicken marinade is that my chicken does not stick to the grill at all. It’s like non-stick magic.
The marinade packs a nice punch of heat thanks to both the chili garlic sauce and sriracha and if you were dipping some tortilla chips into the marinade, yes it’s spicy.
Garlic Grilled Chicken Ingredients
To make this grilled garlic chicken, you’ll need:
- Mayonnaise
- Classic yellow mustard
- Lime juice
- Olive oil
- Garlic
- Chili garlic sauce
- Sriracha
- Honey
- Black pepper
- Fresh parsley and cilantro (both optional)
- Chicken breasts

How to Grill Spicy Garlic Chicken
- Add all the ingredients except the chicken into a bowl and whisk together the spicy garlic chicken marinade.
- Transfer the marinade mixture to a large zip-top plastic bag, add the chicken, seal, and squish contents around to evenly coat the chicken.
- Let the chicken marinate for at least 30 minutes.
- Then grill over medium-high heat until cooked through, garnish if desired, and serve!
Time Saving Tip
As a shortcut, I used chicken breast tenders (sometimes called breast cutlets or medallions). Their smaller size makes for faster grilling times and much more even cooking.
Grilling FAQs
Of course! Just keep in mind that chicken thighs may require more or less time on the grill depending on how thick they are, whether they’re boneless or bone-in, etc.
I’ve only made this spicy garlic chicken on an outdoor grill but I’m sure you can also make it on an indoor grill pan. You might be able to bake the spicy garlic chicken as well, but I haven’t tried it myself.
I don’t find the garlic chicken marinade makes for overly spicy chicken — just the right amount of spiciness. The grill has a way of mellowing everything. However, if you’re sensitive to spices and heat, you may wish to start with the half the recommended amounts of chili garlic sauce and sriracha, and add more to taste if desired.
If desired, BEFORE transferring the garlic chicken marinade to a zip-top bag, you can reserve about 1/4 cup to serve as a dipping sauce for the finished chicken. Only use reserved marinade that’s never touched the raw chicken!
Storage and Reheating Instructions
In the fridge: Let the chicken cool before storing in an airtight container. It will last up to 5 days.
In the freezer: Leftover chicken can be sealed in a freezer bag and frozen for up to 3 months. Thaw overnight before reheating.
To reheat: Warm leftover chicken in the microwave at 30-second intervals.

Spicy Garlic Grilled Chicken
Ingredients
- ½ cup mayonnaise
- 2 tablespoons classic yellow mustard
- 2 tablespoons lime juice
- 2 tablespoons olive oil
- 3 to 5 cloves garlic, minced or finely pressed
- 1 tablespoon chili garlic sauce, or to taste
- 1 teaspoon to 1 1/2 tablespoons sriracha, or to taste
- 1 teaspoon honey, optional and to taste
- ½ teaspoon freshly ground black pepper
- 1 tablespoon fresh cilantro, optional
- about 1.25 pounds chicken breast cutlets
- fresh parsley or cilantro, optional for garnishing
Instructions
- Add all ingredients except the chicken to a medium bowl and whisk to combine. *
- Transfer the marinade mixture to a large ziptop plastic bag, add the chicken, seal, and squish contents around to evenly coat the chicken.
- Place bag in the fridge to marinate for at least 30 minutes, or up to 24 hours.
- Preheat an outdoor grill to medium-high heat (or indoor grill pan) and grill the chicken for about 7 minutes, or until done; flip intermittently to ensure even cooking.
- Optionally garnish with fresh herbs and serve with reserved marinade, if desired.

The chicken turned out very tender! I cooked it on the grill. I didn’t have any chili sauce so I submitted it with more sriracha. It cooked well on the grill and didn’t stick! I recommend!

I can’t find chili garlic sauce where I live. Do you have a recipe to make it?
I would just use extra sriracha sauce then.

This was so good–not too spicy but just right!! I used about 2 lbs of chicken so I would have plenty of leftovers and generously doubled the marinade and saved some (it might sound a little crazy but celery and carrots are good dipped in it too).
