This strawberry oat bar recipe is an easy, one bowl, no mixer recipe that takes just minutes to make.

The crust and oatmeal crumble topping are one and the same. I love recipes like this so thereโ€™s one less step and one less bowl to wash! 

These strawberry bars arenโ€™t overly sweet and the strawberry flavor shines beautifully, which is why theyโ€™re great for a grab-and-go breakfast, brunch, snacks, or a healthier dessert.

Theyโ€™re soft and tender, yet slightly chewy from the oats, and I just adore anything with a crumble topping!

This strawberry oat bars recipe uses ingredients that you probably already have in your fridge and panty!

For this recipe, you’ll need: 

  • Butter
  • Flour
  • Old-fashioned oatsย 
  • Granulated sugar
  • Light brown sugar
  • Salt
  • Fresh strawberries
  • Lemon juice 
  • Cornstarch

How to Make Strawberry Oatmeal Bars

Oatmeal strawberry bars are quick and easy to make! Here’s an overview of the recipe:

  1. Make the crumble topping: Melt the butter in a large bowl before adding in some flour, oats, two types of sugar, and salt.
  2. Set 1 cup of the mixture aside to be sprinkled on later as the oatmeal crumble topping, then pack the rest into a greased 8ร—8-inch baking pan.
  3. Make the strawberry filling: Toss to combine the strawberries, cornstarch, lemon juice, and sugar. Spread the strawberry mixture over the crust.ย 
  4. Sprinkle the reserved crumble topping over the strawberry layer before baking.
  5. Bake: Bake the bars until the edges are set and the oatmeal crumble topping is just turning golden.

Recipe FAQs

Can I Replace the Strawberries with another fruit?

Absolutely! I adapted the recipe from my Blueberry Oatmeal Crumble Bars. I simply swapped out blueberries for strawberries. I also have a Raspberry Oatmeal Crumble Bars recipe as well that uses raspberry preserves rather than actual fresh raspberries. My latest creation are these Mango Bars!

Can I reduce the amount of sugar in the recipe?

You’re fine to reduce the sugar in the strawberry filling, but I don’t recommend reducing the amount of sugar in the crust / crumble topping mixture.

Can The Bars Be Made with frozen strawberries?

I imagine so! You’d need to thaw them overnight in the fridge and drain any excess liquid, however. Otherwise the strawberry filling will be runny.

Can I Double This Recipe?ย 

Yes you can. Simply double the ingredients list and bake the strawberry crumble bars in a 9×13-inch pan. The bake time should be roughly the same.ย 

Storage and Freezing Instructions

Bars will keep airtight at room temperature for up to 1 week, in the fridge for up to 10 days, or in the freezer for up to 6 months. Note that the crumble topping will not stay crispy as time passes and will become softer and more soggy. There is no way around this in a fruity crumble desserts!

Ingredients  

Crust and Crumble Topping

  • ยฝ cup unsalted butter, melted
  • 1 cup all-purpose flour
  • ยพ cup old-fashioned oats
  • ยฝ cup granulated sugar
  • ยผ cup light brown sugar, packed
  • ยฝ teaspoon salt, or to taste

Strawberry Layer

  • 2 cups coarsely chopped fresh strawberries
  • โ…“ cup granulated sugar
  • 2 tablespoons lemon juice
  • 2 teaspoons cornstarch

Instructions 

  • Crust and Crumble Topping:Preheat oven to 350F. Line an 8-inch square pan with aluminum foil and spray with cooking spray; set aside. Lining the pan helps with cleanup and is recommended.
  • In a large, microwave-safe bowl melt the butter, about 1 minute on high power.
  • Add the flour, oats, sugars, optional salt, and stir to combine. Mixture will be dry and sandy with some larger, well-formed crumble pieces.
  • Set 1 heaping cup mixture aside to be sprinkled on later as crumble topping.
  • Transfer remaining mixture to prepared pan, and using a spatula or your fingers, hard-pack the mixture to create an even, smooth, flat crust; set aside.

Strawberry Layer:

  • In a largeย mixing bowl (same one used for crust and crumble is okay), addย all ingredients and toss to combine. If sugar hasnโ€™t dissolved fully thatโ€™s okay because it liquifies while baking.
  • Evenly distribute strawberry mixture over theย crust.
  • Evenly sprinkle with the reserved heaping 1 cup crumble topping mixture. Before sprinkling, I squeeze the mixture in my palm to encourage bigger crumble pieces to form.
  • Bake for about 50 minutes, or until edges are set and center has just set. Crumble topping should appear set and very pale golden and the strawberry filling mixture will be bubbling along the edges. Barsย mayย take longer than 50 to 55 minutes if the strawberries are very juicy. Watch your bars, not the clock, when evaluating doneness.
  • Place pan on a wire rack and allow barsย to cool for at least 1 hourย before slicing and serving. If you try to slice bars before theyโ€™ve cooled completely, theyโ€™ll be extremely messy and could fall apart.ย 

Notes

Oats: Donโ€™t use quick cook or instant, because theyโ€™re finer and behave like flour and will make the mixture too dry.
Storage: Bars will keep airtightย at room temperature for up to 1 week, in the fridge for up to 10 days, orย in the freezer forย up to 6 months.

    This is a MUST make! I’m not a sweets person but had a ton of strawberries that needed to be used. Made this exactly as stated, but added a little under a 1/4 cup of sugar to the strawberry filling part and had to cook it for about an hour. It’s buttery, just lightly sweet, crust had a great texture/flavor! Perfect for a light dessert or packed in lunches!

    Iโ€™ve made these 2x now and love them!! Theyโ€™re so quick and easy. I use a kitchen scale to make sure everything is measured properly and theyโ€™ve come out perfect both times. Iโ€™ll likely try these with other berries too!

    Seemed much longer to set. Strawberries were thawed which made them juicy, but… Delicious at the end. Gonna stick to fresh berries, and believe me I’m gonna try them all!!!

    These were so delicious but didn’t turn out the way I expected. I added a little extra sugar and maybe thats why but they were very difficult to cut threw that bottom crust, it was kind of crunchy but also chewy. Very delicious but a real pain to deal with, is that the way it’s suppose to be?

    1. I am glad you enjoyed the flavor overall! In terms of too crunchy yet chewy, this is a sign that you overbaked them. Reduce the baking time a bit next time.

      Also, your strawberries perhaps were not as juicy and your “dough” was drier than mine.

      Finally, use a light hand when measuring dry ingredients and make sure you’re not accidentally over-measuring which will cause a denser, drier dough.
