Hi Friends!  Well just a couple more days until Christmas!  If you’re celebrating, I hope you’ve made your list and checked it twice and you’re in a mellow and calm frame of mind.

The frame of mind that I am in is Use Up What I Have on Hand before our trip is over.

Remember when I made these?

Well it would have been just awful had I not used up the half of bag of marshmallows and half bag of butterscotch chips I had laying around.

So I decided to make a half batch of  Rice Krispie Treats using my Recipe Here (Easily can be Vegan & GF as noted in that recipe)
 
I used half a bag of marshmallows and sprinkled the extra half bag of Butterscotch Chips on top

And then I made a half batch of Vegan Chocolate Frosting

With local Dark Vanilla Extract.  I could drink this stuff!

The Result:

Perfect way to use up what I had laying around!

It would have been a crime to let my ingredients just go to waste, right?

Questions
1. Do you hate wasting food?  Or not using up what you have on hand and throwing something out?
God, you know I do!  I am frugal and have posted about my Tips for Saving Money on Grocery Budget so you know I wasn’t going to leave marshmallows and butterscotch and chocolate chips behind.  Hell no! 

2. If you’re working, do you have off Thursday and Friday?  I would imagine that today is many people’s last day of work for a few.  Or hopefully so!

3. What do you like to cook in the microwave?  Or freezer?
I know some people hate the microwave, but for me, it’s a tool

Some of my fave desserts can be made in the microwave.  Or just thrown in the freezer.

Or both the micro and the freezer.  Such as these next three.  First you micro a few things, stir them together by hand, then you let them set up in the freezer.   And you’re done.   Fast and easy.

See you back here later today.   Yes, I have been posting twice a day lately.  Who knows how long it will last, but for the past half a week, it’s been fun.  It actually is saving me time. 

Lately, with many things in my life and on my blog, my strategy is stop talking about what my plan is or what I am going to do, and just do it.  Some of you have asked me if I am moving to two posts a day permanently?  You never know…
