Vegan Bananas Foster

Recently, I decided to make Vegan Bananas Foster.

My recipe is based on the classic Brennan’s Restaurant of New Orleans Bananas Foster recipe that my dad used to make for me as a kid.

Bananas Foster (vegan, GF)

serves 4, generously

1 c brown sugar

1/4 cup butter, coconut oil, or Earth Balance

2 Tbsp Pumpkin Butter, optional

2 Tbsp Maple Syrup

2 Tbsp Water

1 Tsp Cinnamon

1/4 cup banana liqueur

2 to 3 ripe, but not over-ripe, bananas – halved and sliced lengthwise

1/4 cup dark rum

4 scoops vanilla ice cream

Combine butter, pumpkin butter, maple, water, cinnamon in a large skillet and cook over low to medium-low heat, stirring until the sugar dissolves. Stir in the banana liqueur, then place the bananas in the pan. When the banana sections soften and begin to brown, carefully add the rum. Continue to cook the sauce until the rum is hot, then tip the pan slightly to ignite the rum and use caution when doing so! When the flames subside, remove the bananas from the pan and place four pieces over each portion of ice cream. Generously spoon warm sauce over the top of the ice cream and serve immediately. Leftover sauce may be stored in an airtight container in the refrigerator for up to 5 days (I doubled the sauce recipe in the photos below)

I think the Banana Liqueur is just above Listerine in terms of hangover potential.  But in a recipe like this, priceless.

So go ahead and add 1/4 c Banana Liquor.

Add 2 diced & sliced bananas. The Brenan’s recipe calls for 4, but honestly…

…I didn’t really make this recipe to eat bananas.  I made it for the juice!  That juice, in there.

Allow the bananas to cook & soften for a couple mins while drowning them in the lovely alcoholic sugar brine.

Then, add 1/4 c dark rum.  I maybe added more like 1/3 c.

Cook another couple mins.  Or don’t.

Just grab your matches and Light Up.

Sorry I didn’t get a pic while the pan was lit up like KMart with the Blue Light Special Flame going on cuz I didn’t wanna burn my kitchen down so I was more concerned about the cooking than the camera.  You understand.

The final de-flamed result?  Uh-huh baby!!!!!

You could pour this hot goodness over banana vanilla softserve.

    I made the donut holes over the weekend with some packaged flax meal. They tasted good but they got stuck in my teeth real bad :(

    I also made overnight PB, banana, chia and oats with a lot of tweaking and had it for breaky this morning mmmmhhhmmm!

    I haven't tried any other recipes (besides the peanut sauce which is slurpalicious) yet because my blender engine overheated so I'm without blend which makes me sad :(

    Thanks for commenting about yoga, didn't get any done yesterday but am trying to plan out my week to fit some in :D

  5. All that food looks delicious! I especially love those donut holes. And yep, I did get that Nunaturals stevia package! It's so good! Saved me a TON of money, too. That stuff is SO expensive at Sunflower Market :D Thanks a bunch for that giveaway!

  6. oh i like the idea to do a recap of all the amazingness. it is so nice to look at again. ugh, my kitchen is a sight right now (SO SICK OF ROOMMATES!) but i am going to attempt to make some vegan treats for my friends in a bit! i just realized the samoas are a 2 day project, duh janetha, but i think i will do the thin mints or something else. I LOVE HALLOWEEN! yes i love hween parties and dressing up! :) xoxoxoooooxoxoxoxoo

  7. My favorite are the samoas! Just the thought of them makes me love coconut and chocolate and yumm they are just so good.

    HALLOWEEN!! You should definitely go to a Halloween party! I dress up in a costume with out a doubt. This is also why I love themed parties because I love wearing costumes. I have random props around my room because it's just so much fun. I remember one random Friday night I just felt like wearing a tear shaped rhinestone as a third eye. Lol everyone thought it was so cool and I made/mesmerized some folks haha.

    Hi Love!!! Man oh man! It has been wayy to long since I visited!! Blah school!!! I hate it! I, in fact, wrote down in my planner many days ago to reply to you about (my comfy clothing post) and how I really can't stand JEANS either. I rarely wear them if I have to be in them for more than 3 or 4 hours. Long days at school = not denim. haha!!!

    Your raw baking is seriously soo gorgeous!! I wish I could sample some!!!
    And the peanut sauce, and raw pasta! TO DIE FOR. I need to get some more zucchini so I can spiralize!! During the summer, it was easy- just go outsdie and snip some off from the garden!

    Anywho, the donut holes, the samoas cookies, the macaroon/blondies…all look so amazing!!!

    I love the yoga poses too! I do splits almost daily because I don't want to lose them after skating!!

  9. Vegan Thin Mint Fudge! I mean, that's the one thing I miss and cannot find a vegan version of ANYWHERE. Plus almost raw? Can't beat that. SO much yum with all those desserts!
