How’s Tuesday going so far (or Monday night for the night owls)? I’m doing good and have been a busy little bee making phone calls, taking care of random life stuff like getting our health insurance squared away and running random errands. But I did manage to squeeze in a little furniture shopping! Since moving into our new house 9 weeks ago, I’ve bought some new furniture to fit new spaces and new rooms. One thing beyond overdue was dining room furniture. Actually, try 7 years of eating on our laps. You can see what I ended up with in the dining room on this post.
But I’ve also been in need of some new master bedroom pieces like a dresser, nightstand, and new bedding. I ended up at trusty West Elm and here’s a few pics of the new bedding. Organic duvet and shams that are a pale silvery blue-ish & a barely there white print. A high sheen silver Euro pillow and then a fluffy white pillow.
But home-decorating aside, I’m stoked so many of you were into the Vegan No-Bake Pumpkin Pie recipe I made and I’m hoping my recipe makes it’s way onto someone’s Thanksgiving dinner table! I know I will be remaking it for T-Day, no doubt!
But moving onto today’s recipe, vegan fajitas. I had been feeling the need for a warmer, less raw dinner and was on Cindy’s blog and saw she recently made green pepper & mushroom tacos. I decided to take my own stab at something along those lines. And vegan fajitas were born. Here’s what I did:
Averies’s Vegan Fajitas
2 Portobello Mushrooms, chopped (approx 2 c, loosely packed)
1/3 c red peppers
1/3 c yellow peppers
1 Tbsp Cumin
1 Tsp Ginger
2 Tbsp Lime Juice
3-4 Tbsp Fresh Squeezed Orange Juice
Couple twists of Black Pepper
Note: No Oil Needed! I love portobellos but hate it that they are like sponges for oil. So I skipped it entirely and the veggies sweated down, and combined with the citrus juices, no oil needed. Yay!
Combine ingredients in a sautee pan
Sautee to your desired liking
and make Averie’s Vegan Sweet Ginger-Lime “Sour Cream” Sauce/Dip
1/4 c Vegan “Mayo” (or non-vegan mayo, whatever you like)
2 Tbsp Lime Juice
3 Tbsp Sugar (or omit the sugar and use stevia and/or agave to taste)
Scant 1 Tbsp Ginger
Combine all ingredients in a bowl
Whisk until smooth. Tangy, sweet, tart, lovely.
Take your Fajita Filling Mixture and place in wraps. Mine were too overstuffed to wrap up well.
Optional garnishes include:
Sour Cream and/or my Sweet Ginger-Lime “Sour Cream”Sauce
Cheese (regular, soy, goat, vegan “nut” cheeze, etc.)
Tomatoes
Black Beans
Corn
Onions
Lettuce/Greens
Other veggies you love

Or skip the wraps entirely (which is what I did) and just eat your fajita mixture tossed with other veggies and use the Sweet Ginger-Lime Sauce as your dressing.
This dinner gave me the feel and satisfaction of cooked food but because the fajita mixture had cooled a bit and I ate it sans fajita wrap and with other raw veggies, it still felt raw-ish. I like the crunchy, crispy, fresh feel of raw food, but with a little of the edge taken off from the cooked Fajita mixture. This vegan dinner totally rocked and is going to go into rotation around here!
For Dessert, I slathered some of this new Almond Butter from Rejuvenative Foods on a few Mary’s Crackers.
I love that it’s organic, raw, and the only ingredients are Organically grown raw almonds.
To me the Rejuvenative Foods Almond Butter is a little sweeter than other brands of AB that I’ve tried, like Maranatha or TJ’s. Good stuff, two thumbs up on it! It’s a little spendy, but a nice splurge, no doubt.
But dessert lover that I am, AB on crackers was not going to fully cut it. So I feasted on the Vegan No Bake Pumpkin Pie. My piece was the 2nd one, Scott’s had the whippy.
Yoga Today is Parivrtta Parsvakonasana (Revolved Side Angle Pose). When you are trying to get into this pose, because you are crossing the entire right side of your body over to your outer left side, you need to reach your right arm up, take a big inhale, reach up, then cross over on the exhale.

Do you have a favorite way to look neat & lady-like while eating really messy food, like fajitas with the filling falling everywhere? Or even sometimes when I dig into my huge bowls of veggies, aka my Hugh Jass salads, I feel like I have dressing running down my face and brocoli bits stuck in my teeth. Thankfully I am married and not on dates trying to impress anyone but ya know, I still like to have some manners. Any funny dating stories of eating messy stuff in front of your date or messy-food-made-neater tips?
