Whisk together the sauce ingredients and set aside.

Add the diced chicken to a skillet with olive oil. Season with salt and pepper, cook, then remove to a plate.

Saute the bell peppers next, followed by the garlic. Pour the sauce and cook until thickened.

Add the canned pineapple chunks and cooked chicken, then cook. Optionally garnish before serving.
