Turn on the Instant Pot to Saute and brown the meat in oil. Then, set aside.

Heat the chiles in a cast iron pan. Submerge the chiles in hot broth, then place them in the blender with canned tomatoes. Blend until smooth, then strain the chile mixture.

Saute the onions in the Instant Pot. Pour the chile mixture, followed by the spices, garlic, salt, and pepper. Place the seared meat back, add the remaining broth. Set it to the meat setting.

After the natural and quick release, spoon out some of the sauce mixture, mix it with maseca, and stir it back in. Turn the Instant Pot to Saute and cook. Add more salt or pepper if desired, and serve.
