A Southwestern spin on traditional Cobb salad complete with tender chicken, crispy bacon, cheese, hard-boiled eggs, tomatoes, black beans, corn, and avocado over a bed of Romaine lettuce!
Start by baking the bacon on a sheet pan, flipping over halfway.

Slice the corn tortillas, spray them with cooking spray or drizzle them with olive oil, and bake them.

To a bowl or platter, add the lettuce. Top with all the remaining salad ingredients.

Drizzle with barbecue sauce and ranch dressing. Season with salt and pepper, then serve.
