White Chocolate Blondies with Chocolate Peanut Butter Frosting

I had a craving for blondies for ages.  I finally decided to make good on that craving and make some.

And I’m so glad I did.

White Chocolate Blondies with Chocolate Peanut Butter Frosting (adapted from Simply Recipes)

For the White Chocolate Blondies

1/2 c butter, melted

1 c packed dark brown sugar

1 egg, lightly beaten

1 tbsp vanilla extract

1/2 tsp baking powder

1/8 tsp baking soda

Pinch of salt (optional)

1 c all-purpose flour

1 c white chocolate chips

Directions:

Preheat oven to 350°F.  Whisk together the melted butter and sugar in a bowl.

Add the egg and vanilla extract and whisk.

Add the flour, baking soda, baking powder, and optional salt, mix it all together.

Add the white chocolate chips.

Pour into a cooking sprayed 8 x 8 pan and spread evenly. Bake for 20 minutes or until a toothpick comes out clean.   Don’t overbake.

Allow to cool and then frost them.

For the Chocolate Peanut Butter Frosting

1 c chocolate chips

1/4 c butter/margarine

1/4 c peanut butter

2 tbsp milk/cream (add more/less depending on desired consistency of frosting)

1 tsp vanilla extract

1 c powdered sugar

Directions:

Melt chocolate chips in microwave.  Then, add and stir in next four ingredients.  It can help to reheat the mixture for 15 seconds or so in microwave if mixture gets too solid and stirring is tricky.  After all ingredients have been incorporated, stir in the powdered sugar.  Continue stirring or whisk together until smooth.

Pour this over the cooled Blondies and frost.  Wait for them to set up (freezer expedites this).

Cut into squares and serve.

Yields: 12 to 18 blondies, depending on size.

Gather your ingredients

Melt the butter and add brown sugar and stir.  Beat an egg.  Then combine it all.

I stirred 3/4 c into the batter and then reserved the final 1/4 c to be sprinkled on top of the batter.

Follow the directions I listed above.  Melt chocolate chips first, then add everything except the powdered sugar, stir, then add the powdered sugar

Not a cookie, not a cake.  They’re bars.  I love bars.  Maybe that’s my Midwestern roots talking where bringing a pan of bars to church basement Bingo games was part of my childhood.

Both white and dark chocolate are used.

Peanut Butter is used.  As is plenty of butter.  Never a bad thing.

Sugar is involved.  Combining butter, sugar, and two types of chocolate really just means success in the end.

I love them but….

…I had never made them until this recipe, a nd I will definitely be making more blondies.

There are so many versions and add-ins and combos, that I get excited just thinking about all the things I can put in the next batch.

3. Best thing you’ve eaten or done so far this weekend?

It’s been in the high 70s and sunny.  No complaints from me!   That’s one of my best things.

  1. those look beautiful! my mother used to make a blondie recipe that was more like a block of chocolate chip cookie…no complaints here ;) best thing i did this weekend was a beautiful 3 mi walk around town that ended in a super amazing beet/tomato/cuke/lemon/kale juice

I am tired of people who are so dogmatic and don’t allow just a little wiggle room. I love it when you say 99%follows your gluten free, vegan diet and 1% just for fun :) You’re an inspiration!!

    1. Oh by all means i am the most NON dogmatic person, no rules, if I want it and I think I won’t get sick from it, I have it…in moderation…and that’s pretty much how I operate :)

    Best thing I’ve done — I had to postpone my 18 mile run until yesterday afternoon ( I prefer to run in the morning!) but I got it done and felt so good about it. Now I can relax today!

    1. I thought of you when I was trolling for blondie recipes. I was going to make yours, but then didnt want to mess with browned butter. knowing my luck, i would have had burned butter. lol

        Yeah, it’s supposed to get hot here, too. Yesterday we did some gardening and it was actually warm enough to sweat! I’m sure I’ll get sick of hot weather soon enough, but right now I’m enjoying it.

        Yesterday I went to a charity plant sale and bought some veggie starters: tomatoes, cukes and zucchinis.

      2. Dang, I swear I’ve never heard of those! Just looked at the recipe; they have chocolate chips in them but no icing on top, so the name seems more applicable for Averie’s recipe.

      3. Since I just got my roots touched up in yesterday’s post, I am no longer a blondie with dark roots. Just like to eat them.

        That is a great name! Too bad Guy sort of took it already. Dang those chefs with their own tv shows taking the great recipe names. How dare they :)

  10. ARGHGHG! I think my head might have just exploded. I NEED these….seriously….Averie, once again, you have outdone yourself. I love bars too and I ADORE chocolate peanut butter frosting. And there is nothing better than melting together a big whopping bar of organic French butter with lots of dark chocolate….I end up eating half of that before I even make it to the recipe.

    I am going to be making these for sure.

  12. Oh wow, these look amazing! I love blondies, but have never made them myself…this recipe will be changing that soon! :)

    Best thing I’ve done so far this weekend is go to a food festival yesterday. I tried so many wonderful foods there, but the smell currently coming from my oven promises that the peanut butter & banana muffins I’m making are also gonna be high up on my yummy foods list! :)
